Tjugofyra timmar efter att sangiovesedruvorna avstj\u00e4lkats och lagts i stora tankar f\u00f6r att b\u00f6rja j\u00e4sa tar man helt enkelt bort femtom procent av musten (saign\u00e9e \/ bleeding \/ \u201dbl\u00f6da\u201d vinet). Dessa femton procent blir s\u00e5 sm\u00e5ningom ros\u00e9vin medan musten som \u00e4r kvar i den ursprungliga tanken g\u00e5r till g\u00e5rdens (d\u00e4rmed mer koncentrerade) r\u00f6da viner.<\/p>\n<p>Ros\u00e9vinet, som heter Aurora, j\u00e4ser p\u00e5 st\u00e5ltank och ska drickas ungt. Vinet \u00e4r friskt, fruktigt och blommigt utan att bli sliskigt. Syrligheten som druvan sangiovese ofta f\u00f6r med sig finns kvar och g\u00f6r att vinet inte blir gl\u00e4ttigt. Ett vin som passar b\u00e5de till f\u00f6rr\u00e4tter eller en enklare pasta och \u00e4ven till vitt k\u00f6tt som kyckling och kalv utan stark kryddning.
