Precis som n\u00e4r det g\u00e4ller \u201dnaturj\u00e4st\u201d \u00e4r det Saccharomyses Cerevisiae som ombildar socker till alkohol och koldioxid (f\u00f6r \u00f6l anv\u00e4nder man \u00e4ven S. Carlsbergensis!). En j\u00e4stproducent har nu lanserat en ny sorts j\u00e4st som inte \u00e4r en Saccharomyses. Den kallas Torulaspora Delbrueckii. F\u00f6rdelen, p\u00e5st\u00e5r man, \u00e4r att vinet f\u00e5r b\u00e4ttre doft med mer angen\u00e4ma karakt\u00e4rer av f\u00e4rska frukter.<\/p>\n<p>N\u00e4r man testade det p\u00e5 chardonnay i bourgogne s\u00e5 fick de viner som j\u00e4st med Torulaspora mer karakt\u00e4r av citrus, blommor och kryddor. De som j\u00e4stes med Saccharomyses Cerevisiae drog mer \u00e5t tropisk frukt, som t.ex. ananas. \u201dT-vinerna\u201d upplevdes ocks\u00e5 som fylligare. En sv\u00e5righet \u00e4r dock at Torulaspora inte klarar av att j\u00e4sa ut sockret helt och h\u00e5llet. J\u00e4sten d\u00f6r n\u00e4r alkoholhalten stiger \u00f6ver 8-10%. D\u00e4rf\u00f6r m\u00e5ste man \u00e4nd\u00e5 tills\u00e4tta lite S-C f\u00f6r att avsluta j\u00e4sningen.
