Deras id\u00e9 \u00e4r att uppn\u00e5 denna l\u00e4gre alkoholhalt p\u00e5 naturlig v\u00e4g.<\/p><p>De vill absolut inte avalkoholisera sina viner. De vill g\u00f6ra riktiga viner, fast med l\u00e4gre alkoholhalt. Och det g\u00e5r, menar de, om man v\u00e4ljer r\u00e4tta druvsorter, h\u00e5ller vinifieringen sval och stabiliserar vinet med filtrering och svavel.<\/p><p>2024 gjorde de en r\u00f6d <strong>gamay<\/strong>, en vit <strong>grolleau gris<\/strong> och en ros\u00e9 <strong>grolleau noir,<\/strong> druvor som mognar tidigt med l\u00e5g sockerhalt. Det skulle aldrig fungera att anv\u00e4nde de mer traditionella Loire-druvorna som chenin blanc och cabernet franc, menar dom.<\/p><p>Samtliga tre druvsorter sk\u00f6rdades tidigt med l\u00e5g potentiell alkoholhalt. Efter en snabb och sval j\u00e4sning fick det vita och ros\u00e9vinet en viss lagring p\u00e5 sin f\u00e4llning f\u00f6r att ge det lite kropp. Det vita vinet har 4 gram restsocker, ros\u00e9vinet 7 gram.
