Carbonara g\u00f6rs med fyra ingredienser (plus spaghetti f\u00f6rst\u00e5s) och h\u00e4r hade man lyckats f\u00e5 tv\u00e5 av dem fel. V\u00e4rst var v\u00e4l att det var gr\u00e4dde i st\u00e4llet f\u00f6r \u00e4ggula, ett kardinalfel. Tyckte Lollobrigida. (Som, f\u00f6r \u00f6vrigt, \u00e4r en sl\u00e4kting till den legendariska sk\u00e5despelerskan.)<\/strong><\/p><p><strong>\u00c5 andra sidan, vem best\u00e4mmer hur en spaghetti carbonara ska lagas?<\/strong><\/p><p>Det finns, tack och lov, inga officiella regler f\u00f6r hur en klassisk matr\u00e4tt ska tillagas. Om s\u00e5 vore hade det nog inte kommit ut lika m\u00e5nga nya kokb\u00f6cker som det g\u00f6r. Som det \u00e4r nu kan kocken s\u00e4tta sin egen pr\u00e4gel p\u00e5 den klassiska matr\u00e4tten och \u00e4nd\u00e5 kalla den vid namn \u2014 b\u0153uf bourguignon, wallenbergare, jansson o.s.v. Hur tjocka ska potatisstavarna vara i en jansson? Ska ansjovisen vara hell eller i smulor? Gravlax kan g\u00f6ras p\u00e5 de mest m\u00e4rkliga s\u00e4tt. I Frankrike \u00e4r den ibland inte ens gjord med lax utan med biff och har d\u00e5 det mots\u00e4gelsefulla namnet <em>gravlax de bouef<\/em>. Kanske dags f\u00f6r Peter Kullgren att komma till Frankrike och protestera?<\/p><p>Det st\u00e5r en helt fritt att modernisera gastronomiska skatter. <em>Cuisine revisit\u00e9e<\/em> s\u00e4ger man ibland p\u00e5 franska (nytolkat k\u00f6k). Varf\u00f6r inte en <em>bordeaux revisit\u00e9? <\/em>Fler och fler slott f\u00e5ngar faktiskt in nya konsumenter med en annan stil \u2013 l\u00e4tt, fruktig, utan ek. Ett bra komplement till klassisk bordeaux.<\/p><p>Det klassiska, vare sig det \u00e4r Napa Cabernet, Rioja, Bordeaux eller Ch\u00e2teauneuf-du-Pape, passar vissa konsumenter men inte alla. Att nytolka vin kan man g\u00f6ra inom existerande regler f\u00f6r ens appellation genom att bara strunta i det som \u00e4r praxis. Det finns t.ex. ingen regel som s\u00e4ger att en bordeaux m\u00e5ste eklagras, inte heller vilken druvblandning det ska vara (med till\u00e5tna druvor). F\u00f6r en rioja r\u00e4cker det enligt reglerna med ett \u00e5r p\u00e5 fat och man f\u00e5r sj\u00e4lv v\u00e4lja storlek och \u00e5lder. Det finns ingen urs\u00e4kt idag f\u00f6r att inte anpassa sig efter kundernas smak.<\/p><p>Fast i praktiken \u00e4r det ju s\u00e5 att vinerna \u201d<em>revisiteras<\/em>\u201d kontinuerligt. Dagens bordeaux har bara en svag likhet med 60-talets bordeaux. Tradition, teknik och kundpreferenser \u00e4ndra successivt fast l\u00e5ngsamt och man m\u00e4rker det kanske inte. (En konsekvens av detta \u00e4r att \u201dtypiskhet\u201d \u00e4r ett d\u00e5ligt s\u00e4tt att bed\u00f6ma ett vins kvalitet (\u00e4ven om vissa tyv\u00e4rr\u00a0h\u00e4vdar att typiskhet\u00a0\u00e4r en viktig faktor i kvalitet) som snarast leder till stagnation \u00e4n till kvalitet. L\u00e4s mer om det h\u00e4r: <a href=\"https:\/\/www.bkwine.com\/sv\/debatt\/ar-det-en-mening-med-vintavlingar\/\">Kvalitet \u00e4r subjektiv, inte objektiv (och s\u00e5 \u00e4r \u00e4ven \u201dtypicitet\u201d)<\/a>. Vem har r\u00e4tt att best\u00e4mma hur ett vin <em>ska<\/em> smaka?)<\/p><p>Visst kan det finnas konsumenter som tycker om carbonara med gr\u00e4dde. Varf\u00f6r skulle de d\u00e5 inte f\u00e5 det? Det \u00e4r dessutom en matr\u00e4tt som omn\u00e4mns f\u00f6r f\u00f6rsta g\u00e5ngen efter andra v\u00e4rldskriget, s\u00e5 traditionen \u00e4r inte s\u00e4rskilt l\u00e5ng.<\/p><p>Fast bara n\u00e5gon vecka efter Francesco Lollobrigidas utbrott fick den italienska gastronomin en sorts revansch. UNESCO godk\u00e4nde n\u00e4mligen landets ans\u00f6kan om att g\u00f6ra dess gastronomi till ett immateriellt kulturarv. S\u00e5 nu g\u00e4ller det att kavla sin pastadeg p\u00e5 r\u00e4tt s\u00e4tt annars kanske man \u00e4r illa ute. \u00c5 andra sidan, pizzan (den napolitanska) \u00e4r redan ett UNESCO kulturarv och det har ju inte direkt hindrat kreativa pizzabagare att g\u00f6ra sina egna tolkningar.<\/p><p>Det franska k\u00f6ket har ingen UNESCO-status men v\u00e4l den \u201dden franska gastronomiska m\u00e5ltiden\u201d. En komplett fyrar\u00e4ttersmiddag, menar Unesco, st\u00e4rker familjeband och fr\u00e4mjar sociala kontakter; d\u00e4rf\u00f6r \u00e4r den viktig att f\u00f6ra vidare till nya generationer. Vi kan inte annat \u00e4n att h\u00e5lla med. Efter en l\u00e5ng och intensiv arbetsdag (och det har vi m\u00e5nga) \u00e4r en god och l\u00e5ngsam middag det b\u00e4sta s\u00e4ttet att varva ner, slappna av och vara med familjen.<\/p><p>Att \u00e4ta m\u00e5nga l\u00e5nga goda middagar med lika goda viner till \u00e4r v\u00e4l ett ny\u00e5rsl\u00f6fte b\u00e4ttre \u00e4n de flesta.
