L\u00e4s dem om du kan!<\/strong><\/p><p>Dessa tv\u00e5 b\u00f6cker \u00e4r fascinerande att l\u00e4sa och ger en enorm m\u00e4ngd fakta om ett \u00e4mne som ofta behandlas v\u00e4ldigt slumpm\u00e4ssigt och ovetenskapligt. De rekommenderas definitivt som l\u00e4sning f\u00f6r alla som \u00e4r intresserade av vin och vinprovning. De \u00e4r v\u00e4ldigt olika, s\u00e5 mycket kompletterande. De b\u00e5da delar dock en &#8221;nackdel&#8221;. De \u00e4r (f\u00f6r n\u00e4rvarande) inte tillg\u00e4ngliga p\u00e5 engelska. Men det borde vara l\u00e4tt att fixa.<\/p><h2>&#8221;Les parfums du vin&#8221; (&#8221;dofterna i vin&#8221;) av Richard Pfister<\/h2><p>&#8221;Les parfums du vin&#8221; \u00e4r skriven av Richard Pfister, en schweizisk oenolog och parfym\u00f6r som ocks\u00e5 \u00e4r konsult till International Organisation of Vine and Wine (OIV). N\u00e4r vi beskriver vin anv\u00e4nder vi vanligtvis liknelser och s\u00e4ger till exempel &#8221;vinet har aromer av vanilj&#8221; (ofta fatlagring) eller &#8221;klippt gr\u00e4s&#8221; (ofta sauvignon blanc), eller &#8221;svarta vinb\u00e4r (cassis)&#8221; (ofta cabernet sauvignon) etc. Det finns en bra anledning till detta. Vin kan inneh\u00e5lla samma typ av kemiska f\u00f6reningar som de som finns i de saker vi j\u00e4mf\u00f6r det med.<\/p><p>Boken listar ett stort spektrum av dessa aromer, var och en med en f\u00f6rklaring av vad det \u00e4r och hur det relaterar till vin. Det ger ocks\u00e5 n\u00e5gra av de viktigaste kemiska f\u00f6reningarna f\u00f6r det. Som ett exempel f\u00f6rklaras svarta vinb\u00e4r som en frukt med det latinska namnet <em>Ribes nigrum<\/em>, fr\u00e4mst odlad i norra Europa. Det finns i m\u00e5nga olika viner, till exempel aleatico, cabernet sauvignon, malbec, merlot och m\u00e5nga andra. De viktigaste kemiska komponenterna \u00e4r metylpropionat, eugenol, metylmerkaptopentanon och damascenon (som du kanske inte n\u00f6dv\u00e4ndigtvis beh\u00f6ver komma ih\u00e5g). Att ha lite f\u00f6rst\u00e5else f\u00f6r kemi hj\u00e4lper s\u00e4kert n\u00e4r man l\u00e4ser boken, men det \u00e4r kanske inte helt n\u00f6dv\u00e4ndigt.<\/p><p>Bokens undertitel \u00e4r &#8221;att f\u00f6rst\u00e5 aromerna i vin f\u00f6r att dricka med mer n\u00f6je&#8221;. Att beh\u00f6va anstr\u00e4nga sig f\u00f6r att uppn\u00e5 n\u00e5got kan faktiskt ofta resultera i mer tillfredsst\u00e4llelse n\u00e4r m\u00e5let \u00e4r uppn\u00e5tt. Och hela v\u00e4gen f\u00f6rklarar Luigi Moio hur vissa &#8221;vanliga sj\u00e4lvklarheter&#8221; om vin inte riktigt passar ihop med vetenskapen.<\/p><p>Det \u00e4r en bok som \u00e4r en skattkammare av kunskap, och med tanke p\u00e5 den anstr\u00e4ngning som kr\u00e4vs f\u00f6r att l\u00e4sa den, kommer den verkligen att \u00f6ka ditt n\u00f6je att dricka vinet. Det \u00e4r synd att det inte finns p\u00e5 engelska. Det skulle ha varit till hj\u00e4lp f\u00f6r v\u00e4rldslitteraturen om vin.<\/p><p>Ytterligare ett avsnitt i boken gjorde den extra trevlig att l\u00e4sa. I b\u00f6rjan av boken beskriver Luigi Moio hur han som nyanl\u00e4nd forskare i Dijon blev inbjuden p\u00e5 middag hos en kollega. Under middagen \u00f6ppnade v\u00e4rden Pascal och hans fru Genevi\u00e8ve n\u00e5gra flaskor vin, men bara en av dem visste vilket vin det var. Den andre fick smaka, t\u00e4nka, analysera och f\u00f6rs\u00f6ka identifiera vad det var. Detta gjorde den unge Moio \u00e4nnu mer angel\u00e4gen om att utforska aromernas v\u00e4rld. Det h\u00e4r \u00e4r exakt samma typ av gissningslek som vi har hemma, varje middag, varje dag. Antingen v\u00e4ljer jag vinet och Britt f\u00e5r gissa, eller s\u00e5 v\u00e4ljer Britt vinet och jag m\u00e5ste gissa.
