Ja, f\u00f6r oss har den aldrig blivit omodern. Vi har haft torr vermouth som v\u00e5r favorit-aperitif l\u00e4nge. Men kanske har vissa ansett den lite gammaldags. Men inte l\u00e4ngre. Vermouthen \u00e4r tillbaka p\u00e5 modet. Fransk vermouth, inte minst. Vi har smakat Dolin, en vermouth fr\u00e5n Chamb\u00e9ry i franska Alperna. Och j\u00e4mf\u00f6rt den med v\u00e5r \u201dhus\u201d-vermouth, Noilly Prat.<\/strong><\/p><p>Vermouth ing\u00e5r i kategorin \u201dsmaksatt vin\u201d. Smaken kommer fr\u00e5n v\u00e4xter och kryddor som har legat och dragit i vitt vin. Vinet f\u00f6rst\u00e4rks med sprit f\u00f6r att uppn\u00e5 en alkoholhalt p\u00e5 mellan 15 och 22 %. Man tills\u00e4tter \u00e4ven socker.<\/p><p>Den f\u00f6rsta vermouthen blandades till i Turin 1786 av Antonio Benedetto Carpano. Idag g\u00f6r man vermouth i m\u00e5nga l\u00e4nder. Till samtliga tills\u00e4tts socker. Det finns beteckningar som indikerar stil och sockerhalt. Dessa regler g\u00e4ller inom EU:<\/p><ol><li>Extra dry (torr vermouth med en sockerhalt p\u00e5 \u00e4r mindre \u00e4n 30 gram per liter)<\/li><li>Dry (torr vermouth med en sockerhalt p\u00e5 mindre \u00e4n 50 g\/l)<\/li><li>Blanc\/Bianco\/Vit (s\u00f6t vermouth med en sockerhalt p\u00e5 minst 130 g\/l)<\/li><li>Rouge\/Rosso\/R\u00f6d (s\u00f6t vermouth med ensockerhalt p\u00e5 minst 130 g\/l)<\/li><\/ol><p>Stors\u00e4ljaren i v\u00e4rlden \u00e4r den s\u00f6ta vermouthen. Italien, med Martini och Cinzano i spetsen, \u00e4r mest k\u00e4nda f\u00f6r sina s\u00f6ta medan franska Noilly Prats stors\u00e4ljare \u00e4r dry och extra dry.<\/p><p>Vi f\u00f6redrar de torra versionerna som har mer karakt\u00e4r fr\u00e5n \u00f6rter och frukter. En viktig ingrediens i en vermouth \u00e4r <strong>mal\u00f6rt<\/strong>; vinet har ju f\u00e5tt sitt namn fr\u00e5n det tyska ordet f\u00f6r mal\u00f6rt, wermut. Vermouth-tillverkarna h\u00e5ller det exakta receptet hemligt. Men hos alla \u00e4r det 20\u201330 olika v\u00e4xter och kryddor som f\u00e5r ligga och macerera i vitt vin. Det kan vara kanel, kryddnejlika, pomeransskal, apelsinskal, koriander, isop, basilika, gentiana, kamomill, ingef\u00e4ra\u2026<\/p><p>Att f\u00e5 just den r\u00e4tta aromatiska karakt\u00e4ren \u00e4r hela hemligheten. Man m\u00e5ste f\u00e5 till en blandning som ger vinet en \u00f6rtig och lite bitter smak som balanserar s\u00f6tman. Mal\u00f6rten, och \u00e4ven andra av de v\u00e4xter man anv\u00e4nder, anses vara bra f\u00f6r matsm\u00e4ltningen och stimulerar aptiten. Det \u00e4r inte f\u00f6r inte som vermouth \u00e4r en s\u00e5dan bra aperitif.<\/p><h2>Dolin, Vermouth de Chamb\u00e9ry<\/h2><p>Giganter som Martini &amp; Rossi och Cinzano dominerar vermouth-marknaden. Men det finns plats f\u00f6r det sm\u00e5skaliga. Dolin h\u00f6r hemma i Chamb\u00e9ry i franska Savoie. Alperna finns runt knuten och h\u00e4r plockar man flera av de ingredienser som s\u00e4tter smak p\u00e5 vermouthen.<\/p><p>Dolin gjorde sin f\u00f6rsta vermouth 1821. Grundaren hette Joseph Chavasse. Firman fick namnet Dolin f\u00f6rst 1843 n\u00e4r Josephs dotter gifte sig med Louis-Ferdinand Dolin. Vid hans d\u00f6d 1869 fortsatte f\u00f6rst hans \u00e4nka Marie att utveckla f\u00f6retaget och sedan hans dotter Marie-Rosalie, tillsammans med sin bror Ferdinand. Den vann priser, till och med en medalj vid v\u00e4rldsutst\u00e4llningen i Philadelphia 1876, tack vare Marie-Rosalies initiativkraft. USA var och har f\u00f6rblivit ett viktigt exportland. Under f\u00f6rbudstiden erbj\u00f6d man till och med en alkoholfri vermouth.<\/p><h2>Prova vermouth<\/h2><p><strong>Dolin Dry Vermouth<\/strong><\/p><p>F\u00e4rgen \u00e4r mycket ljus, n\u00e4stan f\u00e4rgl\u00f6s, doften diskret och elegant med en tydlig \u00f6rtig karakt\u00e4r. K\u00e4nns behagligt torr i smaken med lite bitter citrus och mentol. God som den \u00e4r, ren, med en citronskiva. Alkoholhalten \u00e4r 17,5 %. Det \u00e4r den torra vermouthen som tillsammans med gin ing\u00e5r i en martini. Tar man mer gin \u00e4n vermouth blir det en dry martini.<\/p><p><strong>Dolin Blanc Vermouth<\/strong><\/p><p>Dolin gjorde sin f\u00f6rsta vita vermouth 1881. Den har en fin \u00f6rtighet och det finns ocks\u00e5 f\u00e4rsk mandel och citrus i doften. I smaken hittar vi citron, fl\u00e4dersaft, en bra \u00f6rtighet och liten bitterhet p\u00e5 slutet som balanserar s\u00f6tman. I v\u00e4xtblandningen ing\u00e5r bl.a. hibiskus, basilika, kanel och mal\u00f6rt och gentiana. Alkoholhalten \u00e4r 17,5 %. Dolin Blanc kan blandas med svartvinb\u00e4rslik\u00f6r till drinken chambery-cassis, en av Hemingways favoriter.<\/p><p><strong>Dolin Rouge Vermouth<\/strong><\/p><p>Detta var den f\u00f6rsta vermouthen som Joseph Chavasse gjorde och man \u00e4r med r\u00e4tta stolt \u00f6ver den. Recepten f\u00f6rblir detsamma. Det \u00e4r den godaste r\u00f6da vermouth jag smakat. F\u00e4rgen \u00e4r kopparr\u00f6d. Frukten \u00e4r mogen och lite syltig men \u00f6rtigheten, med betoning p\u00e5 lite bittra medicinal\u00f6rter, ger balans. H\u00e4r finns en god kryddighet p\u00e5 slutet. Alkoholhalten \u00e4r 16 %. Drick den kall med is. Kan ocks\u00e5 blandas med gin och campari till en negroni.<\/p><h2>Noilly Prat, fransk vermouth fr\u00e5n Medelhavet<\/h2><p>Att j\u00e4mf\u00f6ra Dolin med Noilly Prat, Frankrikes mest s\u00e5lda vermouth, \u00e4r intressant. Det visar att \u00e4ven om en vermouth tillverkas p\u00e5 ungef\u00e4r samma s\u00e4tt \u00f6verallt s\u00e5 finns det stora skillnader. Noilly Prat g\u00f6rs nere vid Medelhavet, i den lilla staden Marseillan inte s\u00e5 l\u00e5ngt fr\u00e5n Montpellier. Firman grundades 1813 av Joseph Noilly och k\u00f6ptes 1971 upp av Martini &amp; Rossi, som numera ing\u00e5r i Bacardi-gruppen. Men Noilly Prat beh\u00e5ller sin s\u00e4rart.<\/p><p><strong>Noilly Prat Original Dry <\/strong><\/p><p>Den speciella mognadsprocessen hos Noilly Prat s\u00e4tter sin pr\u00e4gel p\u00e5 vinet. Vinet lagras p\u00e5 fat utomhus, under \u00f6ppen himmel, i ett \u00e5r, exponerat mot v\u00e4drets makter. Detta p\u00e5verkar b\u00e5de f\u00e4rg och smak. I blandningen finns bl.a. kamomill, fl\u00e4der, bittra apelsiner fr\u00e5n Tunisien och koriander fr\u00e5n Marocko. 18 % alkohol.<\/p><p>The specific maturation process of Noilly Prat leaves its mark on the wine. The wine is aged in barrels outside for one year, exposed to the forces of the weather. This affects both colour and taste. The wine<\/p><p>Vilken \u00e4r godast, Noilly Prat Original Dry eller Dolin Dry? Lika goda men v\u00e4ldigt olika. B\u00e5da borde finnas tillg\u00e4ngliga i kylsk\u00e5pet, alltid.<\/p><h2>Vermouth-cocktails<\/h2><p><strong>Chamb\u00e9ry Cassis:<\/strong> Vit vermouth h\u00e4lls \u00f6ver en skv\u00e4tt med cr\u00e8me de cassis. Fyll p\u00e5 med club soda.<\/p><p><strong>Martini<\/strong>: Det klassiska receptet \u00e4r h\u00e4lften gin och h\u00e4lften torr vermouth, men anv\u00e4nd de proportioner som passar din smak. Dekorationen \u00e4r inte n\u00f6dv\u00e4ndig, men en skiva citron \u00e4r alltid trevligt.<\/p><p><strong>Negroni<\/strong>: En tredjedel vardera av r\u00f6d vermouth, gin och campari<\/p><p><strong>Americano<\/strong>: Blanda campari, r\u00f6d vermouth, citronsaft, fyll p\u00e5 med bubbelvatten<\/p><p><strong>Bamboo<\/strong>: Lika delar torr vermouth och torr sherry samt en skv\u00e4tt angostura bitter<\/p><p>Och det <strong>enklaste<\/strong> s\u00e4ttet att njuta av det: Kall och torr vermouth med en citronskiva eller som long-drink blandad med en god tonic (helst den torraste som du kan hitta).<\/p><h2>Vermouth och matlagning<\/h2><p>Vermouth \u00e4r ocks\u00e5 en oumb\u00e4rlig ingrediens i k\u00f6ket. Ist\u00e4llet f\u00f6r att anv\u00e4nda ett vitt vin kan du ta en rej\u00e4l skv\u00e4tt vermouth (torr!) i s\u00e5sen eller f\u00f6r att delacera stekpannan. N\u00e4r du g\u00f6r en omelett kan du blanda den med \u00e4ggen innan du vispar dem. Bara n\u00e5gra exempel. Det ger lite extra aromer och fyllighet n\u00e4r du anv\u00e4nder det. Och det kan hj\u00e4lpa till att h\u00e5lla kocken glad.
