Ving\u00e5rdarna finns i alla v\u00e4derstreck utom i l\u00e4ngst \u00f6sterut mot den rum\u00e4nska gr\u00e4nsen. De t\u00e4cker runt <strong>65 000 hektar<\/strong>, f\u00f6rdelade p\u00e5 22 vinregioner. Det \u00e4r svalast i Sopron i nordv\u00e4st och varmast i Vill\u00e1ny i s\u00f6der, om \u00e4n inte hett. 60 % av arealen \u00e4r gr\u00f6na druvor. Produktionen ligger p\u00e5 cirka 2,9 miljoner hektoliter.<\/p><h2>N\u00e5gra viktiga druvor i Ungern<\/h2><p>K\u00e9kfrankos, en synonym till blaufr\u00e4nkish, \u00e4r den mest planterade druvan i Ungern. Den har sina r\u00f6tter i den \u00f6sterrikisk-ungerska dubbelmonarkin och vi hittar den lite varstans i \u00f6stra Europa. Men ocks\u00e5 l\u00e4ngre bort. Helt nyligen har den faktiskt spridit sig \u00e4nda till Nya Zeeland. K\u00e9kfrankos ing\u00e5r i m\u00e5nga av Ungerns mest k\u00e4nda r\u00f6da viner och den \u00e4r huvuddruvan i de k\u00e4nda bikav\u00e9r-vinerna. Ibland g\u00f6rs vinerna i en l\u00e4skande stil med mycket r\u00f6da b\u00e4r, ibland mer strama och koncentrerade.<\/p><p>Bland de bl\u00e5 m\u00e4rks \u00e4ven <strong>cabernet sauvignon<\/strong>, <strong>cabernet franc<\/strong>, <strong>merlot<\/strong>, <strong>k\u00e9koport\u00f3<\/strong> (portugieser), <strong>kadarka<\/strong> och <strong>zweigelt<\/strong>.<\/p><p>N\u00e5gra viktiga gr\u00f6na druvor \u00e4r <strong>cserszegi f\u0171szeres<\/strong>, <strong>olaszrizling<\/strong> (synonom till gra\u0161evina\/welschriesling), <strong>irsai oliv\u00e9r<\/strong> och vindistrikt som t\u00e4cker 65 000 hektar. Men n\u00e4stan h\u00e4lften av allt vin i Ungern g\u00f6rs p\u00e5 det stora sl\u00e4ttlandet, s\u00f6der om Budapest. En av de stora regionerna h\u00e4r \u00e4r <strong>Kuns\u00e1g<\/strong>, landet st\u00f6rsta region med 18 500 hektar. H\u00e4r producerar man ungrarnas vardagsvin. Mycket av vinet \u00e4r vitt, p\u00e5 bl.a. olaszrizling och irsai oliv\u00e9r. Vinerna blir ofta aromatiska, l\u00e4ttdruckna och lite blommiga men h\u00e4r finns olika stilar. H\u00e4r odlas ocks\u00e5 k\u00e9kfrankos som anv\u00e4nds b\u00e5de till r\u00f6tt, ros\u00e9 och mousserande vin. De r\u00f6da vinerna dominerar stort med 80 % av produktionen. <strong>Egri Bikav\u00e9r<\/strong> &#8211; tjurblod fr\u00e5n Eger &#8211; \u00e4r Ungerns allra mest k\u00e4nda vin \u00e4ven om nog inte alla har positiva minnen av vinet. Det \u00e4r ett vin med en l\u00e5ng tradition, \u00e5tminstone 150 \u00e5r men p\u00e5 1970- och 1980-talen var det h\u00f6gst mediokert. Under kommunisttiden g\u00e4llde massproduktion och f\u00f6ga h\u00e4nsyn togs till kvalitet.<\/p><p>Jag minns den kommunistiska stilen av tjurblodet och jag kan f\u00f6rst\u00e5 att dagens producenter av egri bikav\u00e9r k\u00e4nner ett behov av at distansera sig fr\u00e5n den. Och mer och mer bleknar minnet av det som dracks f\u00f6rr. Bland dagens bikav\u00e9r finns allt fr\u00e5n utm\u00e4rkt till superbt.<\/p><p>Bikav\u00e9r fr\u00e5n Eger \u00e4r mest k\u00e4nd, men regionen Szekz\u00e1rd (se nedan) kan ocks\u00e5 g\u00f6ra en bikav\u00e9r (men dessa tv\u00e5 regioner \u00e4r de enda). En bikav\u00e9r \u00e4r alltid en blandning av olika druvor med k\u00e9kfrankos som den viktigaste.<\/p><p>Och varf\u00f6r tjurblod? Namnet kommer troligen fr\u00e5n en gammal legend. N\u00e4r ottomanerna invaderade slottet i Eger 1552 drack ungrarna r\u00f6tt vin f\u00f6r att bli starka och modiga. Vinet f\u00e4rgade deras sk\u00e4gg r\u00f6tt, och ottomanerna, som inte sj\u00e4lva var vindrickare, trodde att de hade druckit tjurblod vilket skr\u00e4mde dem tillr\u00e4ckligt f\u00f6r att dra sig Kvaliteten \u00e4r genomg\u00e5ende h\u00f6g i Vill\u00e1ny som har ett bra mikroklimat med berg som skyddar i norr och varma medelhavsvindarna som v\u00e4rmer upp fr\u00e5n s\u00f6der.<\/p><p>Druvorna \u00e4r framf\u00f6r allt k\u00e9kfrankos och k\u00e9koport\u00f3 men under senare \u00e5r har man framg\u00e5ngsrikt b\u00f6rjat odla \u00e4ven cabernet sauvignon, cabernet franc och pinot noir. <strong>Cabernet franc<\/strong> har visit sig trivas riktigt bra h\u00e4r. Regionen \u00e4r k\u00e4nt f\u00f6r sina fina k\u00e9kfrankos och kadarka. Druvan kadarka ger ett ljust, elegant vin och den g\u00f6r extra bra ifr\u00e5n sig i Szeksz\u00e1rd.<\/p><h2>Balaton-sj\u00f6n<\/h2><p>Omr\u00e5det runt den natursk\u00f6na Balaton-sj\u00f6n g\u00f6r en m\u00e4ngd olika typer av viner. Olaszrizling \u00e4r den mest planterade druvan. Men h\u00e4r finns man ocks\u00e5 tysk riesling, h\u00e4r kallad rhein riesling, pinot gris, sauvignon blanc, muscat ottonel, k\u00e9kfrankos med flera druvor. Ving\u00e5rdar finns b\u00e5de p\u00e5 norra och s\u00f6dra sidan om \u00f6n.<\/p><p>Strax norr om Balaton ligger den lilla distriktet <strong>Soml\u00f3<\/strong>. Det \u00e4r v\u00e4rt att n\u00e4mnas inte minst f\u00f6r den gr\u00f6na druvan juhfark som odlas h\u00e4r. Den \u00e4r \u00e4n s\u00e5 l\u00e4nge inte s\u00e5 spridd i Ungern men b\u00f6r l\u00e4ggas p\u00e5 minnet. Den skiljer sig fr\u00e5n m\u00e5nga andra av de lokala vitvinsdruvorna d\u00e5 den inte \u00e4r aromatisk.
