Hundratals ink\u00f6pare och journalister samlas i Bordeaux i april f\u00f6r att smaka p\u00e5 den senaste \u00e5rg\u00e5ngen. N\u00e4stan tv\u00e5 \u00e5r innan den sl\u00e4pps p\u00e5 marknaden. Det \u00e4r en marknadsplats f\u00f6r n\u00e5gra av de mest ber\u00f6mda &#8211; och dyraste &#8211; vinerna i Bordeaux. Ch\u00e2teau Palmer i Margaux \u00e4r en av dem. Men h\u00e4r g\u00f6r de det lite annorlunda. 23 september lanserade de sin nu 10-\u00e5r gamla \u00e5rg\u00e5ng. Det \u00e4r allts\u00e5 \u201dprim\u00f6rer tio \u00e5r senare\u201d. Varje \u00e5r l\u00e4gger de undan ungef\u00e4r h\u00e4lften av sin produktion och l\u00e5ter den vila i k\u00e4llaren. N\u00e4r den har n\u00e5tt &#8211; f\u00f6r ett vin \u2013 den respektabla \u00e5ldern av 10 \u00e5r, sl\u00e4pper de ut den p\u00e5 marknaden. De har just b\u00f6rjat s\u00e4lja Ch\u00e2teau Palmer 2011. Jag tr\u00e4ffade slottets verkst\u00e4llande direkt\u00f6r f\u00f6r att smaka och diskutera.<\/strong><\/p><p>Ch\u00e2teau Palmer \u00e4r ett av de sagoslotten l\u00e4ngs <em>route des ch\u00e2teaux<\/em> i Bordeaux. N\u00e4r du k\u00f6r norrut in i Margaux kan du se den vackra byggnaden p\u00e5 h\u00f6ger sida. Strax bakom det g\u00f6mmer sig Ch\u00e2teau Margaux. Palmers historia g\u00e5r tillbaka \u00e5tminstone till 1700 -talet d\u00e5 det under annat namn enligt s\u00e4gnen \u00e5tnj\u00f6ts i det kungliga slottet i Versailles. Men fr\u00e5n det nuvarande namnet kan du se att det var en utl\u00e4nning som gav ber\u00f6mmelse till slottet. Utl\u00e4ndskt \u00e4gande av vinodlingar \u00e4r verkligen ingen nyhet.<\/p><p><em><strong>Detta \u00e4r en l\u00e4ngre version av en artikel publicerad p\u00e5 <\/strong><\/em><a href=\"https:\/\/www.forbes.com\/sites\/karlsson\/\" target=\"_blank\" rel=\"noopener\"><em><strong>Forbes.com<\/strong><\/em><\/a><em><strong>.<\/strong><\/em><\/p><h2>En utl\u00e4nning ger det dess ber\u00f6mmelse<\/h2><p>\u00c5r 1814 f\u00f6rv\u00e4rvade Charles Palmer slottet. Han var en engelsk generalmajor och riksdagsledamot och aide-de-camp f\u00f6r prinsregenten. Men i slutet av sitt liv hade han gjort slut p\u00e5 alla sina pengar \u201dp\u00e5 grund av kostnaderna f\u00f6r att driva sina ving\u00e5rdar\u201d (enligt Wikipedia). Idag har slottet \u00e5terigen kommit p\u00e5 gr\u00f6n kvist.<\/p><p>I (den nu ganska dammiga) klassificeringen av Bordeaux -vinerna fr\u00e5n 1855 hedrades det som en tredje \u201dcru\u201d, en mycket respektabel plats. Det var en varm v\u00e5r och sommar, s\u00e5 sk\u00f6rden var ov\u00e4ntad tidigt \u201d, f\u00f6rklarade han. &#8221;Men p\u00e5 Palmer var \u00e5rg\u00e5ngen \u00e4nnu mer pr\u00e4glad av det som h\u00e4nde den 4 juni&#8221;, fortsatte han. &#8221;Ett hagelov\u00e4der drabbade ving\u00e5rdarna.&#8221; Hagel kan vara f\u00f6r\u00f6dande. Det kan f\u00f6rst\u00f6ra inte bara bladen utan \u00e4ven druvorna och grenarna, med l\u00e5ngsiktiga konsekvenser.<\/p><p>Men p\u00e5 Palmer kom haglet vid en \u201dbra\u201d tid, eller s\u00e5 bra som hagel nu kan vara. Det var efter blomningen men innan frukten verkligen hade b\u00f6rjat utvecklas. Hade det varit tidigare eller senare kunde det ha varit katastrofalt. Hagel under blomningen kan inneb\u00e4ra att inga blommor utvecklas till frukt, och om druvorna redan \u00e4r v\u00e4lutvecklade kan de skadas allvarligt och bli v\u00e4rdel\u00f6sa.<\/p><p>Som det var p\u00e5 Chateau Palmer 2011 var det de unga skotten som drabbades. Mycket av de unga grenarna f\u00f6rst\u00f6rdes, men de sm\u00e5 knopparna \u00f6verlevde. Resultatet blev att vinstocken nu m\u00e5ste fokusera p\u00e5 att \u00e5teruppbygga sig sj\u00e4lv och l\u00e4gga det mesta av sin energi p\u00e5 att skapa nya skott och grenar och mindre p\u00e5 att utveckla druvorna. &#8221;Detta innebar att vi hade en exceptionellt liten sk\u00f6rd 2011, bara cirka 20 hektoliter per hektar&#8221;, f\u00f6rklarade Thomas Duroux. Med s\u00e5 liten avkastning var druvsaften mer koncentrerad \u00e4n vanligt. Detta var \u00e4nnu mer markerat p\u00e5 grund av den varma sommaren.<\/p><p>Under ett vanligt \u00e5r anv\u00e4nder Chateau Palmer tre druvsorter: Ungef\u00e4r lika delar cabernet sauvignon och merlot plus en klick petit verdot.<\/p><p>Merlot ger frukt och aromer; cabernet ger struktur, tanniner och svarta vinb\u00e4r. Petit verdot anv\u00e4nds i sm\u00e5 m\u00e4ngder av vissa vingods, ofta fr\u00e5n n\u00e5gra procent upp till 10 procent. Det kan ge lite extra frisk syra och struktur tack vare sina ganska h\u00f6ga tanniner. Men 2011 var cabernet sauvignon p\u00e5 Palmer s\u00e5 kraftfull och koncentrerad att de best\u00e4mde sig f\u00f6r att inte anv\u00e4nda n\u00e5got av petit verdot i sitt \u201df\u00f6rstavin\u201d, Ch\u00e2teau Palmer. D\u00e4rf\u00f6r blev 2011 helt enkelt en blandning av merlot och cabernet sauvignon.<\/p><h2>Smaken av 2011<\/h2><p>S\u00e5, hur \u00e4r det med vinet?<\/p><p>Det var ett absolut n\u00f6je att smaka p\u00e5 Ch\u00e2teau Palmer 2011; det var ett uts\u00f6kt vin. F\u00e4rgen var bedr\u00e4gligt m\u00f6rk; den kunde leda en till att man f\u00f6rv\u00e4ntar dig ett mycket t\u00e4tt vin. Men nej, ist\u00e4llet var det ett mycket elegant, n\u00e4stan aromatiskt vin. Det fanns massor av frukt i doften, klassisk cassis och lite blommigt. En antydan av ek, men inte f\u00f6r mycket. I munnen hade den ganska mycket kraft men beh\u00f6ll sin elegans med mycket uppfriskande frukt. Tanninerna \u00e4r mycket n\u00e4rvarande men ocks\u00e5 h\u00e4rliga och mjuka. Jag fr\u00e5gade Thomas om han hade sett n\u00e5gon minskning av prim\u00f6rernas betydelse eller ett minskat intresse under de senaste \u00e5ren. &#8221;Inte alls&#8221;, var hans tydliga svar. \u201dDet brukar vara anglosaxiska medier och handel som s\u00e4ger detta.
