Fr\u00e5gan var:<\/p><p>M\u00e5ste Bourgogne \u00f6verge pinot noir och chardonnay?<\/p><p>Det lugnande beskedet var att det inte \u00e4r n\u00f6dv\u00e4ndigt. Inte riktigt \u00e4n i alla fall. Innan man byter druvor finns det olika m\u00f6jligheter att g\u00f6ra pinot och chardonnay mer anpassningsbara.<\/p><p>Man kan leta bland de m\u00e5nga kloner med varierande karakt\u00e4rsdrag som de b\u00e5da druvorna har. Bland klonerna finns en stor variation. Man kan \u00e4ven byta rotstock och leta efter s\u00e5dana som b\u00e4ttre t\u00e5l torka och v\u00e4rme. Men ocks\u00e5 experiment med andra druvsorter rekommenderades.<\/p><p>Savagnin fr\u00e5n Jura med sin h\u00f6ga syra n\u00e4mndes, och likas\u00e5 grekiska assyrtiko. Bland de bl\u00e5 druvorna n\u00e4mndes syrah, xinomavro fr\u00e5n norra Grekland och nebbiolo som l\u00e4mpliga f\u00f6r Bourgognes terroir. Men detta \u00e4r l\u00e5ngtidsplanering, p\u00e5pekade Jean-Michel Boursiquot, professor i ampelografi.<\/p><p>Vinproducenter till\u00e5ts experimentera med fr\u00e4mmande druvsorter, s.k. VIFA, vari\u00e9t\u00e9s d\u2019int\u00e9r\u00eat \u00e0 fin d\u2019adaptation, p\u00e5 h\u00f6gst 5 % av arealen. De f\u00e5r ing\u00e5 i vinet med h\u00f6gst 10 %.<\/p><p>Vinosph\u00e8re Bourgogne arrangeras av Bureau interprofessionnel des vins de Bourgogne (BIVB).
