Talar man om kvalitetsf\u00f6rb\u00e4ttringar i n\u00e5got vindistrikt \u00e4r eklagringen ofta en del i det hela. Hur v\u00e4lg\u00f6rande \u00e4r d\u00e5 ekens inverkan p\u00e5 vinet? M\u00e5r alla viner bra av att eklagras? Och \u00e4r eklagring egentligen ett nytt fenomen?<\/p><p>Nej, tr\u00e4fat har funnits n\u00e4stan lika l\u00e4nge som vintillverkning, som ett s\u00e4tt att f\u00f6rvara och transportera vinet p\u00e5. Men det \u00e4r bara sedan slutet p\u00e5 1900-talet som man p\u00e5 allvar har intresserat sig f\u00f6r att mer i detalj unders\u00f6ka ekens inverkan p\u00e5 vinet. Och det har visat sig vara en minst sagt komplex vetenskap.<\/p><h2>Hur p\u00e5verkas vinet av ekfatslagring?<\/h2><p>Vad h\u00e4nder d\u00e5 med vinet om man fatlagrar det? Man t\u00e4nker kanske i f\u00f6rsta hand mest p\u00e5 de aromer som eken bidrar med till vinet: vanilj, kafferostning, kryddor, en viss br\u00e4ndhet. Men ekfaten har andra egenskaper f\u00f6rutom att de tillf\u00f6r aromer till vinet. Det sker en l\u00e5ngsam oxidering, som \u00e4r f\u00f6rdelaktig f\u00f6r vinet, tanninerna mjuknar, vinet blir fylligare och rundare (<em>sucrosit\u00e9<\/em> brukar man tala om p\u00e5 franska) och f\u00e4rgen g\u00e5r mot vackert tegelr\u00f6d. L\u00e4tta b\u00e4riga viner, som till exempel de flesta Beaujolais-viner, eller enkla, opretenti\u00f6sa viner ska man inte fatlagra. \u00d6ver huvud taget, viner som lever p\u00e5 sin friska fruktighet skulle inte vinna p\u00e5 att eklagras. Snarare riskerar de att f\u00f6rlora, eftersom frukten skulle riskera att torkas ut av eken.<\/p><p>Det kr\u00e4vs allts\u00e5 ett ganska kraftigt vin med bra struktur och str\u00e4vhet f\u00f6r att riktigt dra nytta av eken.<\/p><h2>Limousin, Vosges eller Allier?<\/h2><p>Det finns gott om ekskogar i Frankrike men \u00e4r man en ambiti\u00f6s vinbonde s\u00e5 duger inte vilken skog som helst utan valet f\u00f6reg\u00e5s av noggranna studier av de olika tr\u00e4dens egenskaper. Limousin-ekarna \u00e4r inte s\u00e5 aromrika och anv\u00e4nds mest till cognac. Ekarna i Bourgogne och Vogeserna (Les Vosges) \u00e4r d\u00e4remot por\u00f6sa och inneh\u00e5ller rikligt med aromer och \u00e4r d\u00e4rf\u00f6r popul\u00e4ra b\u00e5de bland bourgogne- och bordeaux-odlarna. Tron\u00e7ais i departementet Allier i centrala Frankrike \u00e4r en annan h\u00f6gt aktad skog. Ist\u00e4llet s\u00e5 l\u00e4gger man vikten p\u00e5 hur t\u00e4t strukturen i tr\u00e4et \u00e4r och namnger faten efter kvaliteten p\u00e5 eken och inte namnet p\u00e5 skogen det kommer ifr\u00e5n.<\/p><p>\u00c5ldern p\u00e5 tr\u00e4det \u00e4r ocks\u00e5 viktig. Eken b\u00f6r vara omkring 200 \u00e5r n\u00e4r den f\u00e4lls. Eftersom en fransk ek m\u00e5ste klyvas (i motsats till att s\u00e5gas) f\u00f6r att uppn\u00e5 bra resultat blir det mycket spill. En ek r\u00e4cker bara till ungef\u00e4r tv\u00e5 fat.<\/p><p>N\u00e4r tr\u00e4det har f\u00e4llts och kluvits m\u00e5ste stavarna torkas, helst utomhus. Torkningen brukar ta mellan 18 m\u00e5nader och tre \u00e5r. F\u00f6r att kunna b\u00f6ja stavarna m\u00e5ste man br\u00e4nna faten p\u00e5 insidan. Detta \u00e4ndrar den kemiska strukturen p\u00e5 eken och d\u00e4rmed den p\u00e5verkan eken har p\u00e5 vinet. Man kan variera l\u00e4ngden p\u00e5 den s.k. rostningen (<em>la chauffe<\/em>) och d\u00e4rmed p\u00e5verka de aromer som tillf\u00f6rs vinet fr\u00e5n eken. Ungef\u00e4r 10-15 minuter \u00e4r lagom f\u00f6r att f\u00e5 kryddiga, grillade och lite vaniljiga aromer. Och hur l\u00e4nge.<\/p><p>Nya fat ger naturligtvis mest ekfatskarakt\u00e4r till vinet och ju \u00e4ldre fatet \u00e4r desto mindre blir p\u00e5verkan p\u00e5 vinet. Bordeaux att l\u00e4gga t ex 1\/3 av sk\u00f6rden p\u00e5 nya fat, 1\/3 p\u00e5 ett \u00e5r gamla fat och 1\/3 p\u00e5 tv\u00e5 \u00e5r gamla fat.<\/p><h2>Eksp\u00e5n i vinet &#8211; framtidens melodi?<\/h2><p>K\u00f6p tep\u00e5sar med eksp\u00e5n och ge varje glas vin du dricker en individuell eksmak! Vad som \u00e4r \u201dlagom\u201d fatkarakt\u00e4r varierar dock mycket beroende p\u00e5 vilken marknad man s\u00e4ljer vinet p\u00e5. I Frankrike \u00e4r ekkarakt\u00e4ren mindre popul\u00e4r (utom f\u00f6r viss bordeaux och bourgogne), men i t.ex.
