Finns det regler? \u00c4r det gott eller konstigt? Begreppet naturvin har v\u00e4xt fram de senaste \u00e5ren. Det har blivit omskrivet och omdebatterat. M\u00e5nga har aldrig druckit ett naturvin och undrar vad det egentligen \u00e4r. Vad betyder det att ett vin \u00e4r \u201dnaturligt\u201d? \u00c4r det ens m\u00f6jligt? Vi f\u00f6rklarar vad naturvin \u00e4r, vilka \u00e4r f\u00f6rdelarna och vilka \u00e4r problemen.<\/strong><\/p><p>Jag minns ett av mina f\u00f6rsta bes\u00f6k p\u00e5 en naturvinsbar. Det var i Paris och \u00e5ret var 2009. \u00c4garen ber\u00e4ttade med stolthet i r\u00f6sten att alla hans viner var oklarade, ofiltrerade, osvavlade och oekade. Jag var glad att han inte la till odrickbara. Jag smakade tv\u00e5 viner den g\u00e5ngen. Fortfarande \u00e4r vinerna ibland sl\u00f6jiga och oxiderade. Ibland \u00e4r de goda, ibland f\u00f6rf\u00e4rliga. Lite av charmen, kanske?<\/p><p>2009 var naturviner ett ganska nytt fenomen f\u00f6r de flesta vindrickare. Men det hade redan s\u00e5 sm\u00e5tt blivit trendigt att dricka dem p\u00e5 vissa vinbarer i Paris, Stockholm, G\u00f6teborg och New York. 3-stj\u00e4rniga Noma i K\u00f6penhamn serverade inget annat. Men en omtalad och omskriven s\u00e5dan. M\u00e5nga undrar vad det egentligen \u00e4r? Det \u00e4r inte helt sj\u00e4lvklart. Det finns ingen officiell definition p\u00e5 det s\u00e4ttet som det finns f\u00f6r ekologiskt.<\/p><p>Det b\u00f6rjade s\u00e5 sm\u00e5tt i Beaujolais p\u00e5 1980-talet n\u00e4r odlare som Marcel Pierre och Jean Foillard b\u00f6rjade g\u00f6ra vin utan tillsatser. Det spred sig i Frankrike. Inte minst Loire-dalen blev ett starkt f\u00e4ste, och sedan vidare ut i v\u00e4rlden. Vinerna b\u00f6rjade s\u00e5 sm\u00e5ningom kallas naturviner.<\/p><p>Enkelt uttryckt ska ett naturvin vara gjort utan hj\u00e4lp av tillsatser och teknik i k\u00e4llaren. Vi tycker inte om det. Det antyder att andra viner \u00e4r onaturliga. Alla viner \u00e4r en produkt av m\u00e4nniskan och inte n\u00e5got som blir till av sig sj\u00e4lv. Men ordet naturvin \u00e4r nu s\u00e5 etablerat att vi f\u00e5r leva med det.<\/p><p>Marknadsf\u00f6ringsm\u00e4ssigt var det ett genialiskt drag att kalla det naturvin. Vem f\u00f6redrar inte viner som \u00e4r \u201dnaturliga\u201d? Och vem vill ha viner som \u00e4r o-naturliga? Situationen f\u00f6rv\u00e4rras av att m\u00e5nga naturvinf\u00f6respr\u00e5kare utm\u00e5lar att som inte \u00e4r naturviner som \u201dindustriviner\u201d eller liknande obehagligt. S\u00e5 n\u00e4r det f\u00f6r lite sedan d\u00f6k upp en privat m\u00e4rkning f\u00f6r naturviner godtog franska myndigheter inte det begreppet s\u00e5 det blev i st\u00e4llet \u201dvin m\u00e9thode nature\u201d. En viktig skillnad. Metoden kunde f\u00e5 kallas naturlig men inte vinet. Till exempel VinNatur i Italien. Ett f\u00e5tal klarar sig helt utan. I naturvinskretsar \u00e4r det oftast ansett acceptabelt att ha cirka 30-50 mg\/liter.<\/p><p>VinNatur, en mycket seri\u00f6s och ambiti\u00f6s italiensk privat m\u00e4rkning f\u00f6r naturvin, s\u00e4ger i sina regler att ett vitt, ros\u00e9 och mousserande vin f\u00e5r ha h\u00f6gst 50 mg\/liter svaveldioxid vid buteljeringen och ett r\u00f6tt vin h\u00f6gst 30 mg\/liter. Detta inkluderar det svavel som frig\u00f6rs naturligt av j\u00e4sningen. Men det st\u00e5r ocks\u00e5 i reglerna att medlemmarna ska jobba mot m\u00e5let att s\u00e5 sm\u00e5ningom helt kunna avst\u00e5 fr\u00e5n tillsatt svavel.<\/p><p>Medlemmar i den nybildade Vin M\u00e9thode Nature f\u00e5r ha upp till 30 mg svavel per liter (tillsatt + naturligt), men det m\u00e5ste markeras p\u00e5 etiketten. Inga andra tillsatser till\u00e5ts, utom lite svavel enligt ovan. S\u00e5 t.ex. klarnings eller filtreringshj\u00e4lpmedel f\u00e5r man inte anv\u00e4nda, inte heller justering av syran. Man f\u00e5r inte anv\u00e4nda \u201dbrutala\u201d eller \u201don\u00f6diga\u201d tekniker under produktionen (lite oklart vad detta inneb\u00e4r). Ibland \u00e4r de ekologiskt certifierade, ibland inte. Att jobba ekologiskt borde dock vara sj\u00e4lvklart f\u00f6r n\u00e5gon som s\u00e4ger sig g\u00f6ra naturvin. Kanske f\u00f6ljer de liknande regler inne i k\u00e4llaren som de tv\u00e5 f\u00f6reningarna ovan, eller kanske har de sina egna.<\/p><p>I slut\u00e4ndan blir det f\u00f6r konsumenten en fr\u00e5ga om hur mycket man litar p\u00e5 producentens ord om vad han g\u00f6r, och hur mycket man har f\u00e5tt veta om vad han g\u00f6r. I praktiken kan det allts\u00e5 vara sv\u00e5rt att veta vad som g\u00e4ller f\u00f6r m\u00e5nga naturviner.<\/p><h2>Svavel finns d\u00e4r av en anledning<\/h2><p>Debatten om naturvin har i m\u00e5ngt och mycket handlat om svavel och j\u00e4st.<\/p><p>Det finns goda sk\u00e4l till att man anv\u00e4nder svaveldioxid under vinifieringen. Svavel \u00e4r ett fantastiskt universalmedel. Det skyddar mot acetobacter (\u00e4ttiksyrabakterier) och hindrar d\u00e4rmed att vinet blir vin\u00e4ger. Det \u00e4r en antioxidant. Det skyddar mot brettanomyces, en j\u00e4stsvamp som kan ge obehagliga bismaker, och andra mikroorganismer som finns i musten och som kan ge defekter.<\/p><p>De risker man l\u00f6per med att arbeta utan svavel (eller med mycket lite) \u00e4r allts\u00e5 att man kan drabbas av smakproblem och hygieniska problem. Man kan f\u00e5 bismaker eller instabila viner som kan drabbas av efterj\u00e4sning i flaskan, acetobacter eller annat. Det beh\u00f6ver inte bli s\u00e5 men det h\u00e4nder l\u00e4ttare, vilket \u00e4r orsaken till vissa naturviners m\u00e4rkliga smaker. F\u00f6r mycket volatil syra, dvs en antydan om vin\u00e4ger, \u00e4r ett vanligt problem (volatil syra i lite m\u00e4ngd \u00e4r inte i sig negativt, utan kan bidra till karakt\u00e4r och komplexitet).<\/p><p>Svavel skyddar ocks\u00e5 mot oxidering. Oxidering \u00e4r en naturlig utveckling n\u00e4r vinet \u00e5ldras och bidrar bl.a. till mognadskarakt\u00e4ren. Att v\u00e4lja ut och tills\u00e4tta en viss j\u00e4stsort \u00e4r annars ett anv\u00e4ndbart verktyg om man vill avst\u00e5 fr\u00e5n att tills\u00e4tta svavel. Ett s\u00e4tt att skydda must och vin fr\u00e5n skadliga mikroorganismer \u00e4r att se till att j\u00e4sningen b\u00f6rjar snabbt och forts\u00e4tter tills allt socker \u00e4r upp\u00e4tet. Andra menar att om man en g\u00e5ng n\u00e5gonsin anv\u00e4nt odlad j\u00e4st s\u00e5 kommer den att finnas i vink\u00e4llarens milj\u00f6 och kommer d\u00e4rmed att vara den j\u00e4st som dominerar i alla j\u00e4sningar.<\/p><p>Det vill allts\u00e5 till att vinmakaren vet vad han g\u00f6r och har kontroll hela v\u00e4gen fr\u00e5n sk\u00f6rd till buteljering. Ett bra naturvin g\u00f6rs inte med laissez faire-teknik.<\/p><p>Men alla naturviner \u00e4r inte bra. Tv\u00e4rtom har de f\u00e5tt ett rykte om sig att smaka konstigt och ibland defekt. St\u00e4mmer ryktet? Till viss del. Det beror p\u00e5.<\/p><h2>\u201dInga gifter eller kemikalier i ving\u00e5rden\u201d?<\/h2><p>Ibland h\u00f6r man kommentaren att naturvin \u00e4r gjorda \u201dutan besprutning i ving\u00e5rden\u201d. Tro inte p\u00e5 det.<\/p><p>\u00c4ven naturvinsproducenters ving\u00e5rdar drabbas av sjukdomar, t.ex. mildiou och oidium. S\u00e5 \u00e4ven de besprutar sin ving\u00e5rd. Det kan finnas n\u00e5got enstaka undantag men i praktiken anv\u00e4nder alla naturvinsproducenter svavel och koppar (en tungmetall), eller ibland andra produkter, f\u00f6r att skydda sina vinrankor mot sjukdomar.<\/p><h2>Hur smakar naturviner?<\/h2><p>Efter att ha provat och druckit naturviner i \u00f6ver tio \u00e5r har jag kommit fram till att smaken handlar mindre om fr\u00e5nvaron av tillsatser i vinet och mer om vinproducenternas filosofi. Vilken typ av naturvin vill de g\u00f6ra?<\/p><p>\u00c4r de rebeller som vill st\u00e5 utanf\u00f6r alla appellationslager och regler? Metoden leder ofta till viner som \u00e4r \u201dotypiska\u201d f\u00f6r sin appellation. Deras viner \u00e4r ofta den saftiga, l\u00e4skande och l\u00e4ttdruckna stilen av naturvin. Det \u00e4r goda och uppfriskande viner \u00e4ven om de ibland smakar mer som cider \u00e4n som vin (kan beror p\u00e5 volatil syra). Ibland \u00e4r de lite p\u00e4rlande (kan bero p\u00e5 efterj\u00e4sning i flaskan). I Frankrike s\u00e4ljs de ofta som <em>vin de france<\/em>, allts\u00e5 vin utan n\u00e5got visst ursprung. VinNatur tolererar inga defekter eller bismaker.<\/p><p>Vissa konsumenter tycker inte att naturviner ska vara \u201dnormala\u201d. Om ett naturvin smakar som ett \u201dvanligt\u201d vin, d\u00e5 blir de besvikna.<\/p><p>Vissa odlare kan g\u00f6ra vin utan tillsatser. Men det \u00e4r inte helt l\u00e4tt. Vissa naturviner k\u00e4nns stumma och tr\u00e5kiga, med torr frukt. Vissa k\u00e4nns oxiderade. Ibland tar de flyktiga (volatila) syrorna \u00f6ver och vinet k\u00e4nns stickigt. Ibland k\u00e4nns vinerna defekta med en \u00f6verdriven \u201dlantlig\u201d doft (brettanomyces?).<\/p><p>Men ibland \u00e4r vinerna superba med en h\u00e4rlig frukt. Och ett vitt vin som \u00e4r lite oxiderat kan bli karakt\u00e4rsfullt. De flyktiga syrorna beh\u00f6ver inte heller vara negativa. Vi dricker mycket naturviner hemma och vi smakar alltid blint. Vi k\u00e4nner ofta igen att det \u00e4r ett naturvin men kan d\u00e5 om\u00f6jligen identifiera varken region eller druva. Vissa producenter h\u00e5ller med oss och erk\u00e4nner att detta \u00e4r ett problem.<\/p><p>Det beh\u00f6ver inte anses som ett problem om vinet \u00e4r gott. Men hur naturvinsentusiasterna kan h\u00e4vda att naturvinerna \u00e4r de viner som b\u00e4st framh\u00e5ller terroiren, ursprung och druva \u00e4r ett mysterium. F\u00f6r oss \u00e4r det precis tv\u00e4rt om. Ironiskt nog leder det till att naturvin d\u00e4rmed blir ett \u201dtekniskt\u201d vin. Det f\u00f6rsta som man identifierar i vinet n\u00e4r man provar det blint \u00e4r den teknik (eller avsaknad av) som producenten anv\u00e4nds. Ursprung och druva d\u00f6ljs av produktionstekniken.<\/p><p>Naturviner kan vara lysande vare sig de \u00e4r gjorda i klassisk stil eller visar upp nya, ovanliga smaksensationer. Men tycker man att vinet \u00e4r defekt s\u00e5 \u00e4r det troligtvis det. Vissa naturviner uppskattas bara av de riktigt h\u00e4ngivna. Ungef\u00e4r som danska ostar eller surstr\u00f6mming.<\/p><p>F\u00f6r konsumenten \u00e4r det ofta ett litet v\u00e5gspel. Folk romantiserar ofta om hur det var \u201df\u00f6rr i tiden\u201d.<\/p><p>\u201dNaturvin \u00e4r det gamla s\u00e4ttet att g\u00f6ra vin, s\u00e5 som man alltid gjorde f\u00f6rr\u201d, h\u00f6r vi ofta. Det \u00e4r inte s\u00e4rskilt sant. Snarast \u00e4r det en myt.<\/p><p>Svavel \u00e4r inget nytt. Man har tillsatt svavel till vinet i 500 \u00e5r, kanske l\u00e4ngre. \u00d6verhuvud taget \u00e4r tillsatser inget nytt. Grekerna och romarna tillsatte allt m\u00f6jligt till sitt vin, havssalt, alger, mj\u00f6lk, saffran, kryddor, honung. I alla tider har man tagit till knep f\u00f6r att vinerna ska smaka b\u00e4ttre, se b\u00e4ttre ut och vara mer h\u00e5llbara.<\/p><p>J\u00e4mf\u00f6rt med gamla tiders vinodlare har dagens naturvinsproducenter ett stort \u00f6vertag. De vet mer om vinets mikrobiologi. De vet hur man b\u00e4st sk\u00f6ter sin ving\u00e5rd f\u00f6r att f\u00e5 fina druvor. Och inte minst, de har tillg\u00e5ng till temperaturkontroll.<\/p><p>Det finns n\u00e5gra f\u00e5 naturvinsproducenter som inte anv\u00e4nder temperaturkontroll. D\u00e5 blir utmaningen \u00e4nnu st\u00f6rre. Men det kan s\u00e4kert fungera det ocks\u00e5 om man anv\u00e4nder riktigt sm\u00e5 j\u00e4stankar. Eller amforor, inspirerad av den gamla georgiska traditionen med nedgr\u00e4vda lerkrus som kallas qvevri. Det \u00e4r popul\u00e4rt i naturvinskretsar med j\u00e4sning och lagring i amforor eller andra typer av stengodsbeh\u00e5llare. Det har inte minst de stora vinfirmorna insett. Svavel \u00e4r en allergen som vissa konsumenter vill undvika \u00e4ven om mycket f\u00e5 personer \u00e4r s\u00e5 allergiska att de skulle fara illa av att dricka ett vin med svavel.<\/p><p>G\u00f6r man st\u00f6rre volymer vin utan tillsatt svavel som ska s\u00e4ljas billigt i livsmedelsbutiker tar man hj\u00e4lp av andra tillsatser eller tekniker. Vinerna \u00e4r ofta ekologiskt certifierade men inte alltid. Det viktiga h\u00e4r \u00e4r fr\u00e5nvaron av svavel. Man ska dock komma ih\u00e5g att svavel frig\u00f6rs naturligt under j\u00e4sningen och finns allts\u00e5 naturligt i vinet.<\/p><p>Med andra ord, ett vin \u201dutan tillsatt svavel\u201d sannolikt likv\u00e4l inneh\u00e5ller svavel.<\/p><p>P\u00e5 i stort sett samtliga vinflaskor ser vi varningstexten \u201dinneh\u00e5ller sulfiter\u201d. Inneh\u00e5ller vinet mer \u00e4n 10 mg svaveldioxid per liter m\u00e5ste varningstexten finnas p\u00e5 etiketten. Det ar sv\u00e5rt att komma under denna gr\u00e4ns. Som exempel: Ovan n\u00e4mnda \u201dVin m\u00e9thode nature\u201d har tv\u00e5 symboler. Har man tillsatt svaveldioxid\u00a0 st\u00e5r det \u201dSulfites &lt;30mg\/l\u201d, d\u00e4r siffran avser hur mycket svavel som finns kvar i vinet vid buteljering (inte hur mycket som \u00e4r tillsatt). Har man inte tillsatt n\u00e5gon svaveldioxid f\u00e5r vinet inneh\u00e5lla h\u00f6gst 20 mg\/l naturlig svaveldioxid enligt deras regler. Det beh\u00f6ver dock inte anges p\u00e5 etiketten enligt deras regler. Association des Vins Naturel (AVN), \u201dLes Vins S.A.I.N.S. \u2019Sans Aucun Intrant Ni Sulfite\u2019 (ajout\u00e9)\u201d och andra. (Och f\u00f6r att undvika missf\u00f6rst\u00e5nd: <em>Vin m\u00e9thode nature<\/em> \u00e4r inte en fransk officiell beteckning.)<\/p><p>Det finns ingen officiell eller allm\u00e4nt accepterad definition av vad naturvin \u00e4r, ut\u00f6ver det vi f\u00f6rklarat h\u00e4r ovan. Beh\u00f6vs det?<\/p><p>Vi tycker inte att det beh\u00f6vs, lika lite som det beh\u00f6vs en officiell certifiering eller definition av vad orangea viner \u00e4r, eller \u201dgamla vinstockar\u201d. Naturvin \u00e4r ett av dessa begrepp som de flesta har en vag aning om vad det betyder och detaljerna \u00e4r sedan en fr\u00e5ga om vad varje vinproducent v\u00e4ljer att g\u00f6ra, och vad varje vinkonsument s\u00f6ker.<\/p><p>Dessutom, att skapa en officiell definition strider mot den rebell-anda som driver m\u00e5nga av producenterna.<\/p><p>F\u00f6r oss r\u00e4cker det med den lite vaga situation som finns idag. Den negativa sidan \u00e4r den propaganda som en del av f\u00f6respr\u00e5karna \u00e4gnar sig \u00e5t och som beskriver alla viner som inte \u00e4r naturviner som indr\u00e4nkta i farliga kemikalier och tillverkade i hemska vinfabriker (l\u00e4s till exempel om <a href=\"https:\/\/www.bkwine.com\/sv\/debatt\/fusket-chateau-vada-det-okanda-fusket-med-ditt-vin-av-mats-eric-nilsson-bokrecension\/\">boken Ch\u00e2teau Vad\u00e5, som har just den attityden, i denna bokrecension<\/a>). Det \u00e4r naturligtvis inte sant. Men m\u00e5nga konsumenter vet ingenting om vinframst\u00e4llning och vissa av dem kanske tror att det \u00e4r s\u00e5.<\/p><p>Kan stora ving\u00e5rdar ocks\u00e5 g\u00f6ra naturvin? Ja, varf\u00f6r inte? Det \u00e4r en fr\u00e5ga om att arbeta rigor\u00f6st. VinNatur i Italien s\u00e4ger dock att &#8221;naturvin produceras i sm\u00e5 snarare \u00e4n industriella volymer av en oberoende producent&#8221;. Men det \u00e4r deras syn p\u00e5 saken. Hur som helst \u00e4r det sv\u00e5rt att f\u00f6rest\u00e4lla sig att stora vinfirmor skulle avst\u00e5 fr\u00e5n den teknik som finns idag i vink\u00e4llaren, s\u00e4rskilt f\u00f6r billiga viner, inte minst med tanke p\u00e5 de v\u00e4sentliga risker de skulle l\u00f6pa f\u00f6r stora produktionsvolymer<\/p><p>Naturvinerna kommer att forts\u00e4tta att vara en liten nisch. Men samtidigt tror jag att begreppet kommer att breddas. Det kommer att bli fler och fler viner utan tillsatt svavel och utan andra tillsatser ut\u00f6ver n\u00e5got \u201dnaturligt\u201d \u00e4mne f\u00f6r att stabilisera vinet. S\u00e5dana finns redan och mer forskning \u00e4r p\u00e5 g\u00e5ng. Det finns inget som s\u00e4ger att inte dessa viner skulle kunna vara naturviner. Definitionen av naturvin bli nog med tiden (\u00e4nnu) mer luddig.<\/p><p>\u00d6ver huvud taget g\u00e5r trenden g\u00e5r mot mindre inblandning i k\u00e4llaren f\u00f6r m\u00e5nga viner, inte minst de ekologiska och de biodynamiska. Certifierade biodynamiska odlare har regler som till\u00e5ter mycket f\u00e5 tillsatser.
