Det \u00e4r bara en mycket liten del av de ekologiska odlarna som ocks\u00e5 \u00e4r biodynamiska. Men de blir fler och fler. Vill man vara biodynamiskt certifierad m\u00e5ste man ocks\u00e5 vara ekologiskt certifierad. Att anv\u00e4nda bek\u00e4mpningsmedel eller g\u00f6dning som \u00e4r syntetiska \u00e4r i vilket fall som helst helt emot den biodynamiska uppfattningen. Allt som tills\u00e4tts jorden m\u00e5ste komma fr\u00e5n levande ting, antingen fr\u00e5n v\u00e4xtriket eller fr\u00e5n djurriket, anser biodynamins skapare Rudolf Steiner<\/p><p>Steiner introducerade det biodynamiska jordbruket 1924 som en reaktion mot konstg\u00f6dningen som d\u00e5 hade anv\u00e4nds av jordbrukare under n\u00e5gra \u00e5r. Jorden h\u00f6ll p\u00e5 ut utarmas, menade Steiner. Konstg\u00f6dning \u00e4r inte bra, sa han, f\u00f6r det \u00e4r en \u201dd\u00f6d\u201d g\u00f6dning av kv\u00e4ve, kalium och fosfor.<\/p><p><em>Detta \u00e4r en artikel i v\u00e5r serie i \u00e5tta delar. De fascineras av \u00e4mnet \u00e4ven om de inte alltid f\u00f6rst\u00e5r. F\u00f6r det \u00e4r sv\u00e5rt att f\u00f6rst\u00e5 biodynamisk odling. Vilket en del av odlarna sj\u00e4lva erk\u00e4nner. Rudolf Steiner var ocks\u00e5 den som grundade antroposofin, en andlig \u201dvetenskap\u201d som det \u00e4r en utmaning att s\u00e4tta sig in i och som i sig har m\u00e5nga kritiker.<\/p><p>Vi har h\u00f6rt m\u00e5nga g\u00e5nger fr\u00e5n biodynamiska vinodlare att de hade sv\u00e5rt att tro att det skulle fungera innan de s\u00e5g resultatet med egna \u00f6gon. Hugh J. Courtney p\u00e5 det amerikanska Institute of Applied Biodynamics har lagt ner mycket tid p\u00e5 att f\u00f6rst\u00e5 Steiners texter. Courtney uttrycker det s\u00e5 h\u00e4r i ett f\u00f6rord till en av Steiners b\u00f6cker: \u201dVerklig f\u00f6rst\u00e5else [av biodynamin] sker inte bara genom att ut\u00f6va sin mentala kapacitet, utan snarare genom att \u2019g\u00f6ra\u2019 eller agera.&#8221;<\/p><p>1924 h\u00f6ll Steiner ett antal f\u00f6rel\u00e4sningar f\u00f6r jordbrukare om hur jorden skulle \u00e5terf\u00e5 sin h\u00e4lsa. Dessa f\u00f6rel\u00e4sningar finns i bokform och h\u00e4r kan man l\u00e4sa om hur Steiner t\u00e4nker sig att jordbruket ska vitaliseras. Om vi ser p\u00e5 den mer praktiska sidan handlar det om att driva ett h\u00e5llbart jordbruk d\u00e4r man anv\u00e4nder egenskaper som finns hos specifika v\u00e4xter och mineraler f\u00f6r att st\u00e4rka vinrankorna och bygga upp deras immunf\u00f6rsvar. Tanken \u00e4r att f\u00f6rebygga sjukdomar s\u00e5 att man inte beh\u00f6ver behandla dem, att arbeta preventivt i st\u00e4llet f\u00f6r kurativt. Med biologisk m\u00e5ngfald i och runt ving\u00e5rden ska man skapa en balans mellan naturen och g\u00e5rden.<\/p><p>Den ursprungliga tanken med biodynamiskt jordbruk \u00e4r att g\u00e5rden ska vara sj\u00e4lvf\u00f6rs\u00f6rjande. Allt man tills\u00e4tter jorden, som t.ex. naturg\u00f6dsel, ska komma fr\u00e5n den egna g\u00e5rden eller \u00e5tminstone fr\u00e5n n\u00e4romr\u00e5det, inklusive kospillningen. Detta \u00e4r naturligtvis om\u00f6jligt idag f\u00f6r de flesta ving\u00e5rdar. De har inte utrymme f\u00f6r djur och ibland inte s\u00e5 mycket utrymme f\u00f6r andra v\u00e4xter heller.<\/p><h2>De biodynamiska preparaten &#8211; k\u00e4rnpunkten<\/h2><p>Till sin hj\u00e4lp har bonden nio biodynamiska \u201dpreparat\u201d. Dessa \u00e4r centrala i biodynamin. Det \u00e4r framf\u00f6r allt dessa som skiljer biodynamin fr\u00e5n ekologisk odling.<\/p><p>Preparaten anv\u00e4nds i ving\u00e5rden i homeopatiska m\u00e4ngder, allts\u00e5 i mycket l\u00e5g koncentration. Tre av dem sprejas \u00f6ver ving\u00e5rden och sex blandas i komposten. De namnges ofta med sina nummer, 500\u2013508. Sju av dem komposteras genom att ligga nedgr\u00e4vda i jorden under ett halv\u00e5r eller ett \u00e5r. Tv\u00e5 av dessa ska ligga i kohorn och de fem \u00f6vriga i andra djurdelar, som urinbl\u00e5sa, in\u00e4lvor eller f\u00e5rskalle. Steiner s\u00e4ger att \u201dlevande ting har alltid en inre och en yttre aspekt\u201d. Det hj\u00e4lper s\u00e4kert m\u00e5nga odlare att de kan k\u00f6pa preparaten f\u00e4rdiga. Det blir f\u00f6rmodligen l\u00e4ttare att acceptera det m\u00e4rkliga med preparaten n\u00e4r man slipper g\u00f6ra dem sj\u00e4lv. Rent praktiskt \u00e4r det heller inte s\u00e5 l\u00e4tt att tillreda dem eftersom det \u00e4r sv\u00e5rt att f\u00e5 tag i de djurdelar som beh\u00f6vs.<\/p><p>Det ska dock po\u00e4ngteras att vi vet flera producenter som g\u00f6r alla sina preparat sj\u00e4lva. Jag var sj\u00e4lv f\u00f6r n\u00e5gra \u00e5r sedan med n\u00e4r en grupp biodynamiska vinodlare i Rh\u00f4ne-dalen tillsammans gjorde preparatet 505, kanske det mest komplicerade av alla. Det var en upplevelse.<\/p><p>H\u00e4r f\u00f6ljer en kort beskrivning av de nio biodynamiska preparaten.<\/p><h2>500: Kospillning i kohorn<\/h2><p>Man fyller kohornen med f\u00e4rsk spillning fr\u00e5n biodynamiska eller ekologiska kor. Det beh\u00f6vs cirka ett horn per hektar. Hornen gr\u00e4vs ner i jorden. H\u00e4r ska de ligga under vintern. N\u00e4r de gr\u00e4vs upp har man f\u00e5tt en, enligt Steiner, \u201dextremt koncentrerad, levande g\u00f6dning\u201d. Inneh\u00e5llet sp\u00e4s ut med vatten och blandas i en \u201ddynamisator\u201d (se nedan) innan det sprejas \u00f6ver ving\u00e5rden. Ett bakterieextrakt kallat <em>Bacillus thuringiensis<\/em> kan anv\u00e4ndas som insekticid.<\/p><p>Det \u00e4r idag t\u00e4mligen vanligt, \u00e4ven utanf\u00f6r de biodynamiska kretsarna, hos ekologiska eller konventionella producenter, att anv\u00e4nda olika plantextrakt eller andra sorters preparat. Vi tr\u00e4ffade f\u00f6r n\u00e5gra \u00e5r sedanen vinproducent i Languedoc som f\u00e5tt i det n\u00e4rmaste hela sin sk\u00f6rd f\u00f6rst\u00f6rd av en hagelskur p\u00e5 v\u00e5ren. De var helt tillintetgjorda till dess att de fick kontakt med en expert inom omr\u00e5det som med hj\u00e4lp av olika plantextrakt \u201dreparerade\u201d ving\u00e5rden och fick den att \u00e5terh\u00e4mta sig, s\u00e5 att de i alla fall fick en hyfsat stor sk\u00f6rd. Ett annat exempel \u00e4r den s.k. Han menade att den moderna vetenskapen t\u00e4nker alltf\u00f6r smalt och inte erk\u00e4nner att dessa krafter ger energi till v\u00e4xter och plantor som sedan f\u00f6rs vidare till oss m\u00e4nniskor.<\/p><p>Steiner dog 1925, bara ett \u00e5r efter att han hade presenterat sina id\u00e9er om biodynamiskt jordbruk. Andra m\u00e4nniskor har fortsatt att utveckla hans tankar. En av dem var Maria Thun (d. 2012) som skapade den biodynamiska planterings- och s\u00e5ningskalendern.<\/p><p>Kalendern beskriver m\u00e5nens och planeternas positioner i f\u00f6rh\u00e5llande till de fasta stj\u00e4rnkonstellationerna (zodiak) under \u00e5ret men ocks\u00e5 relationerna mellan planeterna.<\/p><p>De 12 stj\u00e4rnkonstellationerna delas in i fyra olika typer, som vardera t\u00e4cker in tre konstellationer. Med dessa skapar biodynamikerna en \u00e5rskalender med fyra olika sorters dagar l\u00e4mpade f\u00f6r olika sorters arbete:<\/p><ul><li>Rotdagar: jord\/r\u00f6tter (oxen, jungfrun, stenbocken)<\/li><li>Blomdagar: ljus\/blommor (tvillingarna, v\u00e5gen, vattumannen)<\/li><li>Bladdagar: vatten\/blad (fiskarna, kr\u00e4ftan, skorpionen)<\/li><li>Fruktdagar: eld\/frukt (lejonet, skytten, v\u00e4duren)<\/li><\/ul><p>B\u00e5de solen, m\u00e5nen och planeterna passerar de fasta konstellationerna. P\u00e5 den m\u00e5nad det tar f\u00f6r m\u00e5nen att r\u00f6ra sig runt jorden passerar den de 12 stj\u00e4rnkonstellationerna och f\u00f6rmedlar krafter till jorden som uttrycker sig enligt dessa fyra olika grupper och som verkar p\u00e5 olika delar av v\u00e4xten. Genom att s\u00e5, sk\u00f6rda, pl\u00f6ja, plantera p\u00e5 r\u00e4tt dagar utnyttjar man dessa krafter och stimulerar d\u00e4rmed v\u00e4xtkraften och h\u00e4lsan i plantorna.<\/p><p>N\u00e4r m\u00e5nen \u00e4r i nedan utvecklas r\u00f6tterna l\u00e4ttare, allts\u00e5 \u00e4r det bra att flytta plantor fr\u00e5n ett st\u00e4lle till ett annat. Vid tilltagande m\u00e5ne stiger saven fortare och \u00f6verdelen av plantan \u00e4r full av vitalitet. Detta \u00e4r ett bra tillf\u00e4lle att ta sticklingar. Luckring av jorden vid olika tidpunkter kommer att ha olika effekt. Hur mycket de biodynamiska odlarna anpassar sitt arbete efter kalendern varierar mycket. En del anser att den har stor betydelse, andra tar mycket l\u00e4tt p\u00e5 den eller f\u00f6ljer den inte alls. De allra flesta \u00e4r pragmatiska och s\u00e4ger t.ex. \u201d\u00e4r druvorna mogna s\u00e5 sk\u00f6rdar vi vare sig det \u00e4r en rotdag eller fruktdag\u201d.<\/p><p>\u00c4ven vissa producenter som inte alls \u00e4r biodynamiska tycker sig ibland ha nytta av kalendern eller tar t.ex. h\u00e4nsyn till m\u00e5nens faser vid arbetet i k\u00e4llaren.<\/p><p>Det \u00e4r viktigt att notera att \u201dkalendern\u201d och det som h\u00f6r d\u00e4rtill inte ing\u00e5r i reglerna f\u00f6r den biodynamiska certifieringen. Det \u00e4r allts\u00e5 ett helt valfritt till\u00e4gg.<\/p><h2>Certifiering<\/h2><p>De biodynamiska vinproducenterna kan bli certifierade av Demeter, den ledande organisationen f\u00f6r biodynamiskt jordbruk, med huvuds\u00e4te i Tyskland. I Frankrike v\u00e4ljer en del att i st\u00e4llet tillh\u00f6ra f\u00f6reningen Biodyvin som grundades 1990 och \u00e4r en alternativ certifiering. De har runt 100 medlemmar. I \u00d6sterrike finns Respekt-Biodyn med ett 30-tal medlemmar. Dessa tv\u00e5 mindre f\u00f6reningar certifierar enbart vinodlare. Demeter certifierar alla sorts jordbrukare. Det finns \u00e4ven vissa andra. S\u00e5 det \u00e4r om\u00f6jligt att s\u00e4ga exakt hur utbredd den biodynamiska odlingen \u00e4r. Demeter certifierar \u00f6ver hela v\u00e4rlden ungef\u00e4r 700 vinproducenter som tillsammans har runt 12 000 hektar. Frankrike \u00e4r totalt \u00f6verl\u00e4gset med runt 300 producenter och 5000 hektar.<\/p><p>Eventuellt finns det en viss trend idag att bli biodynamisk av marknadsf\u00f6ringssk\u00e4l. Det \u00e4r ett s\u00e4tt att f\u00e5 uppm\u00e4rksamhet. Det \u00e4r helt klart p\u00e5 modet idag att vara biodynamisk. Om alla som s\u00e4ger sig jobba biodynamiskt g\u00f6r det enligt Steiners l\u00e4ra, \u00e4r sv\u00e5rt att veta.<\/p><h2>Fungerar det?<\/h2><p>Biodynamiska odlare som vi k\u00e4nner ber\u00e4ttar om de konkreta f\u00f6r\u00e4ndringar de har sett i ving\u00e5rden och i vinerna. De f\u00e5r b\u00e4ttre syra i sina viner, s\u00e4ger de ofta. Beror det p\u00e5 de biodynamiska preparaten? Eller p\u00e5 att de \u00e4r talangfulla och duktiga vinodlare och vinmakare? Att de har l\u00e4rt sig att b\u00e4ttre ta hand om sin ving\u00e5rd och observera vad som h\u00e4nder i ving\u00e5rden?<\/p><p>Det \u00e4r sv\u00e5rt att f\u00f6rst\u00e5 den ibland h\u00e4tska kritik som biodynamiken ibland drabbats av. Jovisst, det \u00e4r mycket i biodynamiken som inte \u00e4r veteskapligt bevisat och som verkar konstig. Men samtidigt \u00e4r det inget i metoden som \u00e4r skadligt. S\u00e5 varf\u00f6r inte l\u00e5ta de som anser att det fungera g\u00f6ra s\u00e5? Det \u00e4r mycket som inte \u00e4r vetenskapligt f\u00f6rst\u00e5tt eller bevisat inom vin, t.ex. att 12 C \u00e4r den perfekta k\u00e4llartemperaturen, att det finns n\u00e5got som heter terroirkarakt\u00e4r, att filtrering tar bort smaker, eller att ett visst glas ger en b\u00e4ttre vinupplevelse och s\u00e5 vidare. S\u00e5 varf\u00f6r f\u00f6rkasta biodynamikerna p\u00e5 den grunden?<\/p><p>N\u00e4r vinodlarna sj\u00e4lva s\u00e4ger att det fungerar, hur ska man d\u00e5 kunna s\u00e4ga emot? Det betyder inte att man m\u00e5ste f\u00f6rst\u00e5, eller h\u00e5lla med om deras metoder. Jag vet att jag inte f\u00f6rst\u00e5r hur det fungerar.
