Men det hindrar inte att de flesta vinproducenter v\u00e4ljer den odlade j\u00e4sten framf\u00f6r vildj\u00e4sten. Det finns \u00f6ver 200 sorter av Saccharomyces cerevisiae p\u00e5 den franska marknaden. Varje \u00e5r lanseras det nya j\u00e4ststammar. Institut Fran\u00e7ais de la Vigne et du Vin (IFV) testar varje \u00e5r alla nyheter och publicerar resultaten.<\/p>\n<p>Vad som \u00e4r viktigt att veta f\u00f6r att kunna v\u00e4lja en j\u00e4stsort \u00e4r t.ex. hur mycket flyktiga syror och glycerol j\u00e4sten producerar, hur h\u00f6g alkoholhalt och temperatur den klarar, hur mycket svaveldioxid den producerar, hur mycket kv\u00e4ve den beh\u00f6ver f\u00f6r att arbeta mm.<\/p>\n<p>Hur stor m\u00e4ngd svavel som j\u00e4sten producerar \u00e4r idag en h\u00f6gaktuell fr\u00e5ga. I stort sett all j\u00e4st producerar lite svavel under j\u00e4sningen. Men det finns sorter som producerar lite, t.o.m. under de 10 mg som \u00e4r gr\u00e4nsen f\u00f6r att man m\u00e5ste skriva \u201dinneh\u00e5ller sulfiter\u201d p\u00e5 etiketten. Normalt producerar j\u00e4sten naturligt mellan 20 och 40 mg svavel, vilket allts\u00e5 ofta \u00e4r den oundvikliga svavelhalten i m\u00e5nga viner. Sedan tills\u00e4tter ofta producenten lite till f\u00f6r att garantera stabiliteten och kvaliteten i vinet.<\/p>\n<p>M\u00e5nga av de som vurmar f\u00f6r viner utan svavel (naturvinsentusiaster t.ex.) \u00e4r ocks\u00e5 negativa till att anv\u00e4nda kulturj\u00e4st (tillsatt j\u00e4st).
