Metoden anv\u00e4nds fr\u00e4mst i Gaillac, Limoux och Die. En mer \u201dmodern\u201d, eller i alla fall mer trendig, variant av denna metod \u00e4r det som kallas <em>p\u00e9tnat<\/em>, eller <em>p\u00e9tillant naturel<\/em>. Det \u00e4r ett l\u00e4ttdrucket bubbelvin, ofta fr\u00e5n Loire-dalen, popul\u00e4rt p\u00e5 \u201dnaturvinsbarer\u201d runt om i v\u00e4rlden.<\/p>\n<p>Nu har Montlouis-sur-Loire i Touraine h\u00f6jt statusen p\u00e5 p\u00e9tnat och inkluderat den i sin appellation. Officiellt heter vinet P\u00e9tillant Originel AOC Montlouis sur Loire. \u201dNaturel\u201d \u00e4r p\u00e5 goda grunder ett k\u00e4nsligt ord att anv\u00e4nda i franska vinsammanhang. \u201dNaturel\u201d till skillnad fr\u00e5n inte naturel? Druvan \u00e4r, precis som f\u00f6r stilla Montlouis-viner, chenin blanc.<\/p>\n<p>En p\u00e9tnat, liksom en m\u00e9thode ancestrale, framst\u00e4lls med hj\u00e4lp av enbart en enda j\u00e4sning. Vinet buteljeras n\u00e4mligen innan den f\u00f6rsta j\u00e4sningen \u00e4r helt avslutad. J\u00e4sningen forts\u00e4tter i flaskan. (En \u201dm\u00e9thode traditionnelle\u201d, som t.ex. i Champagne, har ju tv\u00e5 j\u00e4sningar, den andra med tillsatt j\u00e4st och socker.) Slutresultatet blir ett vin med ett l\u00e4gre tryck \u00e4n ett med m\u00e9thode traditionelle vin (3-3,5 bar i st\u00e4llet f\u00f6r 6) och lite l\u00e4gre alkoholhalt.<\/p>\n<p>En p\u00e9tnat \u00e4r oftast helt torr medan en m\u00e9thode ancestrale ofta \u00e4r lite s\u00f6t och med \u00e4nnu l\u00e4gre alkoholhalt.
