Diemersdal Estate i Durbanhill i Sydafrika har nyligen lanserat sin tredje \u00e5rg\u00e5ng av sin Sauvignon Blanc Winter Ferment. F\u00f6r detta vin sk\u00f6rdas druvorna i februari. Druvorna pressas och musten f\u00e5r 3 dagars skalkontakt. J\u00e4sningen sker dock inte f\u00f6rr\u00e4n under den sydafrikanska vintern. Innan dess ligger musten nedfryst i fyra m\u00e5nader. Detta ger uppenbarligen en alldeles speciell smak till vinet, enligt \u00e4garen och vinmakaren Thys Louw.<\/p>\n<p>Det som var mest f\u00f6rv\u00e5nande f\u00f6r honom \u00e4r vinets h\u00f6ga tiol-inneh\u00e5ll, mycket h\u00f6gre \u00e4n vad som \u00e4r vanligt i en sauvignon blanc fr\u00e5n Sydafrika. Tioler \u00e4r komponenter som kommer fram under j\u00e4sningen och som ger sauvignon blanc dess speciella aromatiska karakt\u00e4r (tropisk frukt, passionsfrukt, krusb\u00e4r\u2026).
