Och genast visste de att de ville g\u00f6ra n\u00e5got riktigt speciellt fr\u00e5n den 1,9 hektar stora pl\u00e4tten som kallas La Groletta. Och den h\u00e4r familjen har t\u00e5lamod. Det tog n\u00e4mligen 18 \u00e5r innan de var redo att lansera detta speciella vin kallat De Buris. &#8221;Vi beh\u00f6vde inte \u00e4nnu en Amarone&#8221;, s\u00e4ger Pierangelo Tommasi, &#8221;men vi ville ha en ny, lyxig och exklusive produkt och f\u00f6r att g\u00f6ra v\u00e5r region r\u00e4ttvisa tyckte vi at den produkten skulle vara en Amarone.&#8221;<\/p>\n<p>Tommasi \u00e4r ett k\u00e4nt familje\u00e4gt hus i Valpolicella i nord\u00f6stra Italien. Det grundades 1902 och \u00e4ger nu vinodlingar ocks\u00e5 i Toscana, Apulien och Basilicata, en region i s\u00f6der d\u00e4r de g\u00f6r viner fr\u00e5n en av mina favoriter bland italienska druvor, Aglianico del Vulture. Tommasi \u00e4r ett \u00e4kta familjef\u00f6retag. Sju familjemedlemmar \u00e4r inblandade i firman. La Groletta \u00e4r en prestigefylld ving\u00e5rd i den v\u00e4stra delen av Valpolicella. Den anses vara en av de b\u00e4sta ving\u00e5rdarna i Valpolicella med l\u00e5nga timmar av solljus och en mild bris fr\u00e5n Gardasj\u00f6n. De Buris-pl\u00e4tten ligger h\u00f6gst upp p\u00e5 Groletta-kullen, med sydv\u00e4stlig exponering. Giancarlo tyckte att han hade nu hade tillr\u00e4ckligt med kunskaper om ving\u00e5rden och han var redo att g\u00f6ra vinet. Pierangelo medger att han d\u00e5 inte visste att det skulle ta ytterligare 10 \u00e5r innan lanseringen. Men, som han s\u00e4ger, tiden \u00e4r viktig. &#8221;Tiden \u00e4r vad De Buris handlar om&#8221;.<\/p>\n<p>2008 b\u00f6rjade sk\u00f6rden den 5 oktober. Druvorna som anv\u00e4ndes f\u00f6r De Buris 2008 var 62 % corvina, 25 % corvinone, 5 % rondinella och 8 % oseleta. Men vi vinner i koncentration.&#8221; Fuktigheten regleras i torkrummet men inte temperaturen, s\u00e5 ju kallare och torrare det \u00e4r ute desto b\u00e4ttre.<\/p>\n<p>De skrumpna druvorna pressades i januari och musten j\u00e4ste l\u00e5ngsamt under en m\u00e5nad i stora slavonska ekfat med den naturliga j\u00e4sten. Vinet lagrades sedan i 1500- och 3000-liters ekfat under fem \u00e5r. Ett vin med en alkoholniv\u00e5 p\u00e5 15,65%, vilket \u00e4r normalt f\u00f6r en Amarone, 4 gram restsocker liter restsocker (perfekt niv\u00e5) och 5,73 gram syra per liter (mycket bra niv\u00e5). Men mer poetiskt kom man s\u00e4ga att det \u00e4r det fylligt och mycket v\u00e4lstrukturerat vin med lena tanniner, m\u00e5nga olika smakskikt, intensiva f\u00e4rska frukter och ett otroligt l\u00e5ngt slut. &#8221;Det h\u00e4r \u00e4r alltid v\u00e5r stil&#8221;, s\u00e4ger Pierangelo, &#8221;v\u00e5ra viner \u00e4r aldrig mognadsbomber, aldrig n\u00e5gonsin, de \u00e4r alltid strukturerade och eleganta.&#8221;<\/p>\n<p>Jag uppskattar att vinet \u00e4r s\u00e5 torrt, bara 4 gram restsocker. M\u00e5nga amarone viner \u00e4r mycket s\u00f6tare trots att Amarone ska vara en torr version av den s\u00f6ta recioto della valpolicella.<\/p>\n<p>Produktionen av De Buris \u00e4r sj\u00e4lvklart mycket begr\u00e4nsad, eftersom arealen \u00e4r s\u00e5 liten. 2008 producerade 5940 flaskor och 300 magnum. De k\u00f6pte Groletta-pl\u00e4tten och de k\u00f6pte ocks\u00e5 Villa De Buris (d\u00e4rav vinets namn). Den \u00e4r fr\u00e5n 1500-talet och \u00e4r den \u00e4ldsta villan i regionen. Den kommer att renoveras under n\u00e4sta \u00e5r och omvandlas till ett Relais Chateaux Hotel.
