M\u00e5nga ros\u00e9er \u00e4r p\u00e5 s\u00e4tt och vis en &#8221;biprodukt&#8221; av n\u00e4r man g\u00f6r r\u00f6tt vin: man b\u00f6rjar med att g\u00f6ra r\u00f6tt vin p\u00e5 vanligt s\u00e4tt och sedan, tidigt under j\u00e4sningen, &#8221;bl\u00f6der&#8221; man tanken, det vill s\u00e4ga, man t\u00f6mmer av lite av musten ur tanken. Det kallas saign\u00e9e p\u00e5 franska. En av de fr\u00e4msta anledningarna till att g\u00f6ra detta \u00e4r att det ger ett r\u00f6tt vin med mer kraft. Huvudsyftet \u00e4r allts\u00e5 att g\u00f6ra ett b\u00e4ttre r\u00f6tt vin.<\/p>\n<p>Om huvudsyftet ist\u00e4llet \u00e4r att g\u00f6ra ett ros\u00e9vin kan man g\u00f6ra det p\u00e5 annorlunda s\u00e4tt. Till att b\u00f6rja med kanske man sk\u00f6rdar druvorna tidigare \u00e4n vad man skulle gjort f\u00f6r ett r\u00f6tt vin, f\u00f6r att beh\u00e5lla mer friskhet. Deras m\u00e5l \u00e4r att g\u00f6ra ett s\u00e5 bra ros\u00e9vin som m\u00f6jligt. De sk\u00f6rda malbec druvorna en m\u00e5nad tidigare \u00e4n den &#8221;normala&#8221; r\u00f6dvinssk\u00f6rden. De anv\u00e4nder ocks\u00e5 lite cabernet franc. De har ocks\u00e5 valt att anv\u00e4nda druvor fr\u00e5n de svalaste delarna av ving\u00e5rden. Deras ros\u00e9 tillverkas utan n\u00e5gon teknisk korrigering, ingen acidifiering, inte f\u00e4rgkorrigering, ingen alkoholjustering (berikning \/ chaptalisering).<\/p>\n<p>De avstj\u00e4lkar och krossar l\u00e4tt druvorna, g\u00f6r en kort maceration vid l\u00e5g temperatur (&#8221;kallt s\u00f6tvatten&#8221;).<\/p>\n<p>Det ger en fyllig och aromatisk ros\u00e9, helt torr, vad jag skulle kalla en &#8221;mat-ros\u00e9&#8221; som fungerar bra till en m\u00e5ltid, snarare \u00e4n en &#8221;pool-ros\u00e9&#8221; (eller bers\u00e5vin) med den Provence-inspirerade mycket bleka f\u00e4rgen som ibland \u00e4ven kan ha lite restsocker och som \u00e4r mycket popul\u00e4r idag (av n\u00e5gon m\u00e4rklig anledning).<\/p>\n<p>Vina Maquis ros\u00e9 har en fin uppfriskande syra, massor av r\u00f6da b\u00e4r, fint och torrt slut.
