Men t\u00e4nk om det egentligen inte \u00e4r s\u00e5 sv\u00e5rt? Sedan n\u00e5gra \u00e5r tillbaka finns n\u00e5got som p\u00e5 franska kallas <i>bioprotection<\/i> (biokontroll p\u00e5 svenska). I korta drag betyder det att man genom att tills\u00e4tta speciella j\u00e4stsorter kan skydda sin must och sina viner fr\u00e5n oxidering och o\u00f6nskade mikroorganismer. Utan att anv\u00e4nda svavel. (Detta \u00e4r bara en variant av biokontroll. Det finns m\u00e5nga andra.)<\/p>\n<p>J\u00e4stsorterna man d\u00e5 ska tills\u00e4tta \u00e4r andra \u00e4n den vanliga Saccharomyces. Dessa andra j\u00e4stsorter f\u00f6rekommer i vildj\u00e4sning men den j\u00e4st man k\u00f6per p\u00e5 burk \u00e4r vanligtvis <em>Saccharomyces cerevisiae<\/em>. Eller var tills f\u00f6r lite sedan. Nu \u00e4r urvalet st\u00f6rre.<\/p>\n<p>I Frankrike finns knappt 20 olika j\u00e4stsorter andra \u00e4n Saccharomyces tillg\u00e4ngliga p\u00e5 marknaden. Vanligast \u00e4r <em>Torulaspora delbrueckii<\/em>.
