Laboratoriet Dubernet i Languedoc vill nu underl\u00e4tta f\u00f6r de odlare som f\u00f6redrar den \u201dnaturliga\u201d vilda j\u00e4sten.<\/p>\n<p>Tanken \u00e4r att laboratoriet under ett \u00e5r samlar in j\u00e4st fr\u00e5n en must som f\u00e5tt spontanj\u00e4sa hos vinodlaren. D\u00e4r kommer de att hitta m\u00e5nga olika j\u00e4stsorter. De b\u00e4sta j\u00e4starterna isoleras sedan i labbet. \u00c5ret d\u00e4rp\u00e5 f\u00e5r odlaren tillbaka dessa och kan allts\u00e5 tills\u00e4tta sin egen j\u00e4st till musten. Vitsen med hela operationen \u00e4r att man i labbet avl\u00e4gsnat s\u00e4mre j\u00e4starter som t ex s\u00e5dana som bildar flyktiga syror eller ger d\u00e5liga aromer.
