Ja, i alla fall de dagar d\u00e5 man f\u00e5r en aperitif (vilket inte \u00e4r varje dag). Aperitifstunden \u00e4r en lugn stund innan middagen eller trevligt mingel med g\u00e4ster innan man s\u00e4tter sig till bords.<\/p>\n<p>Men vad ska man v\u00e4lja? Visst kan man ta ett glas vitt vin eller ett glas mousserande. Men det finns ocks\u00e5 en uppsj\u00f6 av aperitifer framtagna f\u00f6r att vara just det, aperitifer. Att drickas f\u00f6re maten f\u00f6r att stimulera aptiten. De har mellan 15 och 20 % alkoholhalt. En del \u00e4r klassiker numera. De har h\u00e5llit sig popul\u00e4ra sedan 1800-talet. Andra finns kvar, men k\u00e4nns bortgl\u00f6mda och lite dammiga. Men det kanske bara \u00e4r inbillning. De kanske \u00e4r i h\u00f6gsta grad v\u00e4lm\u00e5ende och omtyckta n\u00e5gon annanstans \u00e4n i Paris.<\/p>\n<p>F\u00f6r helt klart finns det regionala skillnader. Det \u00e4r knappast i norra Frankrike som man dricker pastis p\u00e5 baren.<\/p>\n<p>I f\u00f6rra numret av Briefen s\u00e5 pratade vi om v\u00e5r favoritaperitif, <strong>Noilly Prat<\/strong>, torr vermouth fr\u00e5n s\u00f6dra Frankrike. Vi undrade ocks\u00e5 vilken som \u00e4r din favorit. Och vi har f\u00e5tt in en del svar. Vissa h\u00e5ller med oss om att Noilly Prat \u00e4r en f\u00f6rtr\u00e4fflig aperitif. Dock med den lilla reservationen att designen p\u00e5 flaskan var snyggare f\u00f6rr! En l\u00e4sare spenderar mycket tid i Andalusien och dricker g\u00e4rna en <strong>fino<\/strong> eller en <strong>montilla<\/strong>, g\u00e4rna med diverse sm\u00e5plock att tugga p\u00e5. Han har, s\u00e4ger han, l\u00e4rt sig av \u201dgubbarna p\u00e5 barerna\u201d. Jo, jo. L\u00e4raktig!<\/p>\n<p><strong>Gin &amp; Tonic<\/strong> \u00e4r popul\u00e4rt nu p\u00e5 sommaren, det m\u00e4rker vi. Vilken gin som \u00e4r b\u00e4st \u00e4r det ingen som har kommenterat, d\u00e4remot efterlyses torrare tonic. Detta \u00e4r en klassiker, uppfunnen av fader Felix Kir, borgm\u00e4stare i Dijon efter andra v\u00e4rldskriget. En kir, i alla fall originalet som serveras i Bourgogne, \u00e4r gjord p\u00e5 vinet Bourgogne Aligot\u00e9 och cr\u00e8me de cassis, svartvinb\u00e4slik\u00f6r. Barken inneh\u00e5ller kinin som har feberneds\u00e4ttande egenskaper. Fr\u00e5n mitten av 1600-talet anv\u00e4ndes kinin som medicin mot frossa och malaria. Och blandat med lite vin (eller gin) g\u00e5r medicinen l\u00e4ttare ner, det \u00e4r ju v\u00e4lk\u00e4nt.<\/p>\n<p>N\u00e5gra klassiska exempel p\u00e5 vinbaserade aperitifer med kinabark \u00e4r <strong>Byrrh<\/strong>, <strong>Dubonnet<\/strong> och <strong>Saint-Rapha\u00ebl<\/strong>. \u00c4ven om jag kan tycka de k\u00e4nns gammalmodiga s\u00e5 finns de att f\u00e5 tag p\u00e5 lite \u00f6verallt i Frankrike. S\u00e5 f\u00f6rmodligen dricks de fortfarande. Lillet finns i vit och r\u00f6d version men det \u00e4r den vita som \u00e4r god (-ast). Lillet best\u00e5r av Bordeaux-vin blandat med apelsin och andra frukter som legat och dragit i sprit. Den \u00e4r inte torr men inte heller alltf\u00f6r s\u00f6t. Dessa tv\u00e5 tillh\u00f6r en grupp aperitifer som g\u00f6rs av druvmust (2\/3) med tillsatt sprit (1\/3). \u00c4r spriten armagnac, d\u00e5 blir det floc de gascogne, \u00e4r den cognac, d\u00e5 blir det pineau des charentes. Det finns ocks\u00e5 en motsvarighet till detta uppe i Normandie som heter <strong>pommeau<\/strong>. Det \u00e4r allts\u00e5 \u00e4ppelmust med tillsatt calvados. Och i denna kategori hittar vi \u00e4ven <strong>ratafia<\/strong> i Champagne, <strong>macvin<\/strong> i Jura och <strong>cartag\u00e8ne<\/strong> i Languedoc<\/p>\n<p>En annan fransk klassiker som inte har f\u00e5tt n\u00e5gra r\u00f6ster \u00e4r <strong>Suze<\/strong>. Vi \u00e4r i och f\u00f6r sig inte s\u00e5 f\u00f6rv\u00e5nade. Den tillh\u00f6r inte v\u00e5ra favoriter. Suze inneh\u00e5ller gentianarot, som visserligen l\u00e4r stimulera aptiten, men den bittra smaken kr\u00e4ver tillv\u00e4njning. Men Suze kan mycket v\u00e4l drickas med is och tonic och d\u00e5 kan den bittra smaken vara ganska trevlig. Jag t\u00e4nker p\u00e5 aperitifen fr\u00e5n Provence, <strong>pastis<\/strong> (eller <em>ainis\u00e9<\/em> som den egentligen borde kallas). Jag dricker pastis ibland, men inte ofta. Jag blir lika f\u00f6rv\u00e5nad varje g\u00e5ng att n\u00e5got kan smaka s\u00e5 mycket lakrits. Smaken kommer av stj\u00e4rnanis, lakritsrot och andra provensalska krydd\u00f6rter. Dessa f\u00e5r ligga och dra i 45-procentig alkohol. Sedan tills\u00e4tts socker i varierande m\u00e4ngd. N\u00e4r man dricker pastis tills\u00e4tter man alltid vatten. Anis inneh\u00e5ller anetol, en olja som l\u00e4r vara bra f\u00f6r magen och den kristalliseras n\u00e4r man h\u00e4ller i kallt vatten. D\u00e4rf\u00f6r har pastis detta mj\u00f6lkaktiga utseende. Det \u00e4r faktiskt inte en s\u00e5 vanlig aperitif i Frankrike. N\u00e5gon har \u00e4ven tyckt att man gott kan dricka en <strong>\u00f6l<\/strong> som aperitif. Ett f\u00f6rslag som jag sj\u00e4lv aldrig har provat \u00e4r <strong>Cognac-Schweppes<\/strong>.<\/p>\n<p>Det \u00e4r bara att konstatera att aperitif-timmen \u00e4r f\u00f6r kort.
