A view over the
vineyard Clos de
l'Echo which is just behind the chateau in Chinon. The thing to the
left that looks like a fallen flag pole is a giant pen, a reference to
that the author of the story about the giant Gargantua came from this
region (Rabelais)
A part of the vineyard has been
replanted by France's best sommeliers. This row was planted by Olivier
Poussier in 2000 who has won the award 'meilleur sommelier du monde'
(World's best sommelier)
Here you can see how the dead yeast
cells form a sediment on the side of the bottle. This has to be
removed...
...by gradually turning the bottle
on its head (with 'remuage'), the sediment collects on the cork and can
then be removed ('dégorgement'). The crown cork is then replaced with a 'real' cork
The cellar is carved out of the
chalk rock. The walls are covered with black mould
