The
Château Liversan was bought
in 1995 by the Lapalu family. They also own four or five other châteaux in the
Médoc. The château and cellars have been beautifully restored. The Domaines
Lapalu now includes, apart from Liversan, the châteaux Patache d’Aux, Lacombe
Noaillac, Lieujean, Le Bosq, Fonpiqueyre, Lagrave, Les Rives de Gravelongue, Les
Traverses la Franque, Le Borderon, and Larrivaux.

Autumn leave |
The grapes matured very unevenly in
2003 so some grape bunches were left at the harvest because they were
not ripe. Now, a few weeks later, they are ripe |

The inside of an
old-fashioned vertical press. At the
bottom: the 'cake' of grape skins, pips and what is left after pressing |
After fermentation in vat: You first draw off the
self run juice. Then you need to take out the solids that remain in the
tank |
You rake them out with what look as a garden tool,
into a screw lift |

| A closer look. There's still some
free run juice dripping |
The screw lift takes the slush on
the right and transports it up to the left. Behind you can see the cage
of the vertical press, into which the slush is dumped |
This is the hydraulic machine that
does the pressing |
Another view of the press container.
Even if the method (vertical pressing) is old-fashioned, the press is
almost brand new |

fermentation tanks as well as smaller plastic containers on the left |

You see more and more chateaux
experimenting with non-French oak. Here it is American oak from a French

| A sealed barrel. Liversan is one of the chateaux who
make Kosher wine and the barrel is sealed so that it can be made sure
that only an authorised rabbi manipulates the wine |
