  The 'botrytis cinerea" (noble rot) starting to have its effect This grape bunch has not been much affected by botrytis. Instead the grapes have simply shrivelled and will still be sweet, but without the special 'noble rot' character Grapes only starting to be affected and drying out The botrytis attacks grape by grape and not the whole bunch all at once. This is why you need to pick individual grapes (or parts of bunches) to get the maximum concentration
