has not been much affected by botrytis. Instead the grapes have simply
shrivelled and will still be sweet, but without the special 'noble rot'
character

The botrytis
attacks
grape by grape and not the whole bunch all at once. This is why you need to pick
individual grapes (or parts of bunches) to get the maximum concentration
